A seafood ragù pasta based on a flavorful soffritto. Instead of heavy cream, we use almond milk to create a refreshing yet intensely savory sauce packed with the essence of seafood and vegetables, allowing you to enjoy a professional-grade dish at home. The soffritto can be made in advance and used in other dishes too.

Ingredients

Main Ingredients (2 servings)

  • Onion 1kg
  • Carrot 300g
  • Celery 150g
  • Frozen Seafood Mix
  • Spaghetti
  • Fresh Parsley (chopped)
  • Parmesan Cheese

Seasonings

  • Extra Virgin Olive Oil
  • White Wine
  • Almond Milk
  • Salt

Steps

  1. For the soffritto, finely chop the onions, carrots, and celery. Using a food processor will save time.
  2. First, place the onion in the food processor and chop finely. Scrape down the sides as needed to ensure even processing without turning it into a puree.
  3. Transfer the finely chopped onion to a pot.
  4. Next, roughly chop the carrots and celery, then place them in the food processor and chop finely.
  5. To the pot containing the chopped onions, carrots, and celery, add about 100cc of Extra Virgin Olive Oil, more than usual.
  6. Place the pot over heat and sauté everything with the Extra Virgin Olive Oil until softened (think of it as steaming). This will form the base of the sauce, the soffritto. [Key Tip!] Making a larger batch allows for freezing. Flatten it in a resealable bag and break off pieces as needed for convenience. This soffritto can also be used for meat sauces, tomato sauces, stews, and curries.
  7. Place the frozen Seafood Mix in a frying pan and cook without thawing.
  8. Cooking the Seafood Mix as is will concentrate the seafood's umami in the released liquid. Cook it directly from frozen.
  9. Start boiling the Spaghetti in a separate pot.
  10. Once the Seafood Mix has thawed and released its liquid, add the White Wine.
  11. Cook off the alcohol from the White Wine.
  12. Then, add about 200ml of Almond Milk. Using almond milk instead of heavy cream results in a light and refreshing finish. [Key Tip!] Almond milk is plant-based, low in sugar, and rich in dietary fiber. It can also be used for vegan dishes.
  13. Taste and adjust the seasoning with Salt.
  14. Add the cooked Spaghetti to the frying pan with the sauce.
  15. Toss the sauce and Spaghetti together to coat.
  16. Add Parmesan Cheese to taste.
  17. Finish by adding a small drizzle of Extra Virgin Olive Oil and mix everything together. The dish is now complete.
  18. Plate the pasta and garnish with the chopped Fresh Parsley.
