A moist and smooth sweet potato recipe that's easy to make in a frying pan. Just shake the ingredients in a bag and grill with butter for an authentic dessert experience, perfect for outdoors or at home. The crunchy sugar texture and fragrant browned exterior are key.
Ingredients
Main Ingredients (8 pieces)
- 1 Sweet Potato (approx. 200-250g)
- 20g Butter
- 1-2 tbsp Milk
- Sesame Seeds (for garnish, to taste)
Seasonings
- 2-3 tbsp Sugar (easy-pour type)
- Butter (for frying, to taste)
- Sugar (for coating, to taste)
Steps
- Wash 1 Sweet Potato, wrap it while still wet with plastic wrap, and microwave.
- After microwaving, check if a skewer can easily pierce through, and lightly mash the surface of the Sweet Potato with a fork or similar tool.
- Remove the plastic wrap and peel the Sweet Potato. (Key Tip!) If the skin is difficult to peel, use a knife or paring knife. If you don't mind the skin, you can mash it with the skin on.
- Place the peeled Sweet Potato into a ziplock bag while still warm.
- Add 20g Butter and 2-3 tbsp Sugar (easy-pour type) to the bag, and mash until smooth while kneading. (Key Tip!) Mashing while warm makes the butter melt easily, resulting in a moist and smooth texture.
- Gradually add 1-2 tbsp Milk while checking the consistency, and knead further to form the dough. (Key Tip!) Be careful not to add too much milk. Adjust to prevent the dough from becoming too loose.
- Divide the dough into 8 portions and shape them into your preferred shape, such as a rugby ball. (Key Tip!) Flattening them slightly makes them easier to grill.
- Garnish the shaped Sweet Potatoes with Sesame Seeds (to taste).
- Sprinkle Sugar (for coating, to taste) on the surface and roll to coat evenly. (Key Tip!) Coating with sugar adds a crunchy texture and sweetness, and also creates a beautiful browned finish.
- Heat Butter (for frying, to taste) in a frying pan.
- Place the Sweet Potatoes in the frying pan, sugar-coated side down, and grill until golden brown. (Key Tip!) For a more authentic flavor, you can add rum or heavy cream to the dough to your liking.
- Once one side is golden brown, flip and grill the other side. (Key Tip!) Don't worry if they break apart slightly; just reshape them while grilling. The Maillard reaction from the sugar will create a fragrant brown color.
- After flipping, add extra Butter (to taste) if desired for an aromatic finish.
- Once both sides are golden brown, transfer to a plate and serve.
