Melt-in-your-mouth deliciousness with just a quick microwave! This exquisite gratin features daikon radish that has fully absorbed the rich white sauce. A heartwarming dish perfect for a winter meal.

- Daikon Radish 400g
- Butter 10g
- Milk 100ml
- Rice Flour 1 tbsp
- Half Bacon 4 slices
- Mixed Cheese (to taste)
Seasonings
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Shiro Dashi (White Soy Sauce Base) 1 tbsp
- [A] Soy Sauce 1 tsp
- [A] Sugar 1 tsp
- Salt (to taste)
- Coarse Black Pepper (to taste)
- Dried Parsley (to taste)
Steps
- Peel and cut 400g Daikon Radish into 1.5cm thick wedges.
- Place the cut daikon radish into a microwave-safe dish.
- Add 1 tbsp Cooking Sake (Rice Wine), 1 tbsp Shiro Dashi (White Soy Sauce Base), 1 tsp Soy Sauce, and 1 tsp Sugar to the daikon radish in the dish. Mix well.
- Cover with plastic wrap and microwave on 600W for 12 minutes.
- After heating for 6 minutes, remove from microwave. Swap the positions of the daikon pieces that are cooked and those that are still white, then continue heating. (Key Tip!) The daikon at the bottom cooks first, so swapping their positions ensures even cooking.
- In a separate microwave-safe dish, add 10g Butter and 100ml Milk.
- Add 1 tbsp Rice Flour. (Key Tip!) Rice flour is less likely to clump. If using wheat flour instead, mix it with the melted butter before adding milk.
- Cut 4 slices Half Bacon into 1cm pieces and add them to the microwave-safe dish with the rice flour.
- Microwave the dish with all ingredients on 600W for 2 minutes 30 seconds.
- After heating for 1 minute 30 seconds, remove from microwave and stir. Heat for another 1 minute.
- Add the softened daikon radish and its cooking liquid to the prepared white sauce. (Key Tip!) The daikon releases a lot of water. To achieve the perfect consistency when combined, make the white sauce thicker by using a bit more flour, as it will loosen up when mixed with the daikon.
- Add the daikon radish and its liquid, and mix everything together.
- Season with Salt (to taste).
- Transfer the seasoned daikon gratin to a gratin dish.
- Sprinkle Mixed Cheese (to taste) and Coarse Black Pepper (to taste) on top.
- Bake under a broiler or in a toaster until the surface is golden brown.
- Once baked, sprinkle with Dried Parsley (to taste).
