A side dish recipe from Kou Kentetsu Kitchen. This power food, Japanese yam, is easy to make in a plastic bag. By removing the slime and marinating, you can enjoy its crisp texture and refreshing taste. Try this dish that's so good, you won't be able to stop eating rice!

Ingredients

  • Japanese Yam 200g

Seasonings

  • Salt 1/2 tsp
  • Vinegar 1 tbsp
  • [A] Sugar 2 tsp
  • [A] Soy Sauce 3 tbsp
  • [A] Vinegar 2 tbsp
  • [A] Prepared Mustard 1-2 tsp

Steps

  1. Peel the Japanese yam.
  2. Cut the peeled Japanese yam in half lengthwise, then into half-moon shapes. Cut into bite-sized pieces.
  3. In a bowl, mix 1/2 tsp salt, 1 tbsp vinegar, and water (not included in the recipe) to cover.
  4. Place the cut Japanese yam in the bowl and let it soak for a few minutes until the slime floats to the surface. (Key Tip!) This pre-treatment removes the slime, making it easier for the marinade to penetrate.
  5. Briefly rinse the Japanese yam and thoroughly pat it dry with paper towels.
  6. Place the dried Japanese yam into a plastic bag.
  7. Add 2 tsp sugar, 3 tbsp soy sauce, 2 tbsp vinegar, and 1-2 tsp prepared mustard to the same plastic bag.
  8. Gently knead everything together to distribute the seasonings evenly.
  9. Remove air from the plastic bag, seal it tightly, and let it marinate for several hours.
  10. Arrange the marinated Japanese yam in a serving dish.
