- [A] Mayonnaise 1.5 tbsp
- [A] Lemon Juice 0.5 tsp
- [A] Sugar 2 pinches
- Salt to taste
Steps
- Prepare water to boil the eggs.
- Once the water boils, gently place 2 eggs into the pot and boil for 10 minutes. [Pro Tip!] Eggs are prone to cracking if dropped forcefully, so place them gently onto the bottom of the pot.
- Prepare the dressing. Add 6g of Salted Kelp to a large bowl and finely chop it with scissors. [Pro Tip!] Finely chopping the salted kelp helps it blend better. Chop it within the bowl to avoid cutting your fingers.
- Add 1.5 tbsp Mayonnaise, 0.5 tsp Lemon Juice, and 2 pinches Sugar to the chopped salted kelp. Mix thoroughly to complete the dressing. [Pro Tip!] Preparing the dressing beforehand allows the salted kelp to meld and become more flavorful.
- Immediately remove the boiled eggs after 10 minutes and cool them rapidly under running water. [Pro Tip!] Rapid cooling creates a gap between the shell and the egg white, making it easier to peel.
- Once the boiled eggs have cooled slightly, drain the remaining water from the pot and gently shake the pot to create cracks all over the shells.
- Peel the egg shells while running water over them.
- Prepare the fish cakes. Cut 2 fish cakes in half lengthwise, then cut them into bite-sized pieces.
- Add the cut fish cakes and 2 hard-boiled eggs, roughly flaked by hand, to the bowl with the prepared dressing. [Pro Tip!] Don't flake the eggs too finely; larger pieces retain their flavor and texture, making them more delicious.
- Peel 1 avocado. Make a cut around the pit with a knife, then twist the two halves to separate them. [Pro Tip!] Choose an avocado that is ripe and slightly soft.
- Remove the remaining pit by inserting the base of the knife into it and giving it a slight twist.
- Scoop out the avocado flesh from the skin with a spoon and chop it into bite-sized pieces directly into the bowl.
- Once all ingredients are in the bowl, gently mix them together, being careful not to mash the avocado, to complete the dish. [Pro Tip!] Gently toss to keep the ingredients' shapes intact and avoid overmixing. Adjust seasoning with salt if needed.
