Steps

  1. Prepare water to boil the eggs.

  3. Prepare the dressing. Add 6g of Salted Kelp to a large bowl and finely chop it with scissors. [Pro Tip!] Finely chopping the salted kelp helps it blend better. Chop it within the bowl to avoid cutting your fingers.
  4. Add 1.5 tbsp Mayonnaise, 0.5 tsp Lemon Juice, and 2 pinches Sugar to the chopped salted kelp. Mix thoroughly to complete the dressing. [Pro Tip!] Preparing the dressing beforehand allows the salted kelp to meld and become more flavorful.
  5. Immediately remove the boiled eggs after 10 minutes and cool them rapidly under running water. [Pro Tip!] Rapid cooling creates a gap between the shell and the egg white, making it easier to peel.
  6. Once the boiled eggs have cooled slightly, drain the remaining water from the pot and gently shake the pot to create cracks all over the shells.
  7. Peel the egg shells while running water over them.
  8. Prepare the fish cakes. Cut 2 fish cakes in half lengthwise, then cut them into bite-sized pieces.
  9. Add the cut fish cakes and 2 hard-boiled eggs, roughly flaked by hand, to the bowl with the prepared dressing. [Pro Tip!] Don't flake the eggs too finely; larger pieces retain their flavor and texture, making them more delicious.
