A refreshing summer dessert, Yogurt Fruit Agar Jelly, that can be easily made in the microwave without any cooking. Utilizing the yogurt container itself, it's ready in a flash with just 5 ingredients. Using canned fruit, you can achieve perfect results with tips for water-bath heating and microwaving.

Ingredients

Main Ingredients (4 servings)

  • Plain Yogurt 400g
  • Canned Fruit 200g
  • Water 100ml
  • Granulated Sugar 3 tbsp
  • Kanten Powder (Agar-agar) 4g

Seasonings

    Steps

    1. Place the entire 400g of Plain Yogurt into a bowl.
    2. Lightly rinse the empty yogurt container and wipe it dry.
    3. Prepare another bowl with hot water. Place the bowl containing the yogurt on top of the hot water to create a double boiler.
    4. While double boiling, add 3 tbsp of Granulated Sugar and mix well until dissolved, reaching a temperature slightly warmer than body temperature (around 40-45°C). [Key Tip!] Microwaving can cause separation, so we'll warm it using a double boiler. If the double boiler water cools down, replace it with hot water. Heat until it's about 40-45°C, warm to the touch (you should feel it's hot when you touch it with your finger). Using a stainless steel bowl, which conducts heat well, is recommended.
    5. Prepare a bowl with a sieve and drain the syrup from the 200g of Canned Fruit.
    6. Cut larger pieces of fruit into bite-sized pieces.
    7. Add about 2/3 of the cut fruit to the warmed yogurt and mix well. Reserve the remaining 1/3 for topping.
    8. In a heat-resistant bowl, combine 4g of Kanten Powder and 100ml of Water, mixing well.
    9. Microwave on 600W for 2 minutes (for 500W, add an additional 10-20 seconds). Heat until the water is vigorously boiling.
    10. Remove from the microwave and quickly mix well to dissolve the kanten.
    11. Microwave again on 600W for 1 minute (for 500W, add an additional 10-20 seconds). [Key Tip!] Kanten will not dissolve properly if not heated sufficiently. After heating for 2 minutes and mixing well, heat for another minute to ensure it's completely dissolved. Adjust heating time based on your microwave model.
    12. Remove from the microwave and mix well again.
    13. Pour the hot kanten liquid into the warmed yogurt all at once, while still on the double boiler. Mix quickly and thoroughly. [Key Tip!] The kanten liquid is hot, so be careful of burns. If the yogurt is cold, it will solidify quickly. Always add the hot kanten liquid to warm yogurt and mix quickly while on the double boiler.
    14. Prepare the empty yogurt container as your mold and pour the yogurt agar jelly mixture from the bowl into it.
    15. Decorate the top with the reserved fruit and gently press them down.
    16. Allow to cool to room temperature, cover, and chill in the refrigerator for about 2 hours until set. It's ready!
