- Soy Sauce 2 tbsp
Steps
- Peel the potatoes. Remove any eyes thoroughly.
- Cut the peeled potatoes into 4 pieces each.
- Place the cut potatoes in a pot and add enough water to cover them. Add Delicious Sugar from Ishigakijima Island 2 tbsp.
- Place the pot over heat and bring to a boil. [Key Tip!] Adding sugar first draws out the potato's flavor and helps the soy sauce penetrate better.
- Once boiling, reduce heat and simmer until the potatoes are tender and the liquid has reduced, exposing the tops of the potatoes.
- Add Soy Sauce 2 tbsp and increase heat to reduce the liquid, allowing it to coat the potatoes.
- While reducing, spoon some of the simmering liquid over the surface of the potatoes a few times.
- Continue simmering until the potatoes start to break down slightly and a desired thickness is achieved. [Key Tip!] Gently rolling the potatoes while simmering helps the flavor to distribute evenly. The starch from the potatoes and the sugar will create a natural thickening.
