- Core one apple (approx. 250g), then thinly slice lengthwise into 2-3mm thick pieces, and cut into thin strips.
- Place the thinly sliced apple in a bowl, sprinkle with 20g sugar and 2g salt, and mix to coat. Gently knead, let sit for about 20 minutes until the apple softens and releases moisture. - After 20 minutes and once the apple has released its moisture, crack in 1 egg and mix until combined.
