A delectable Onion Chicken Nanban recipe featuring an abundance of seasonal onions. The irresistible combination of crispy onions, juicy chicken thigh, and homemade tartar sauce makes this dish perfect with rice or a drink. A satisfying and hearty dish!
Ingredients
Main Ingredients (2 servings)
- Chicken Thigh 1 piece (300g)
- Onion 1/4 piece (60g)
- Eggs 2
- All-purpose Flour 3 tbsp
- Mayonnaise 2 tbsp
Seasonings
- [A] Salt 1/4 tsp
- [B] Water 2 tbsp
- [C] Soy Sauce 1 tbsp
- [C] Vinegar 1 tbsp
- [C] Sugar 1 tbsp
- [D] Dried Parsley (optional)
- [E] Salt, Pepper (to taste)
Steps
- Peel and thinly slice Onion 1/4 piece (60g).
- Soak the sliced onions in water to remove their sharp taste. If using new onions, spread them on paper towels to draw out the sharpness.
- Trim excess sinew from Chicken Thigh 1 piece (300g) and cut into bite-sized pieces.
- Place the cut chicken in a bowl, add Salt 1/4 tsp and 1 Egg, and mix well.
- Add another Egg to the remaining beaten egg from the chicken. Pierce the yolk a few times, cover with plastic wrap, and microwave on 600W for about 1 minute and 10 seconds. Cook while observing to prevent the egg from bursting.
- Mash the cooked egg with a fork, mix in Mayonnaise 2 tbsp and Salt and Pepper (to taste) to make the tartar sauce.
- To the bowl with the chicken, add All-purpose Flour 3 tbsp and Water 2 tbsp, and mix well.
- Heat about 5mm to 1cm of oil in a frying pan.
- Once the oil is hot, place the coated chicken pieces in the pan and pan-fry.
- Cook for about 3 minutes. Once the coating is set and browned, flip and cook the other side.
- Cook for a total of about 6 minutes until browned and the coating is firm. Remove from pan and drain excess oil.
- Clean the frying pan, add Soy Sauce 1 tbsp, Vinegar 1 tbsp, and Sugar 1 tbsp, and heat to dissolve the sugar.
- Once the sugar is dissolved, add the drained chicken and coat with the sauce.
- Once the chicken is coated, transfer to a serving plate.
- Thoroughly pat dry the soaked onions and place them on top of the chicken.
- After placing the onions, drizzle the remaining sauce from the frying pan over everything.
- Spoon the prepared tartar sauce over the onions.
- Sprinkle Dried Parsley over the tartar sauce as desired.
