An easy hack recipe for spicy soy sauce yakisoba using Spicy Ramen and chicken thigh, with avocado. The chewy noodles, spicy flavor, and mild avocado create a perfect match, making it a mouthwatering dish that whets the appetite. Highly recommended even for hot weather!

Ingredients

Main Ingredients (1 serving)

  • Spicy Ramen: 1 packet
  • Chicken thigh (cut into small pieces for Oyakodon): 100g
  • Avocado: 1/2
  • Shredded Nori Seaweed: (to taste)
  • Chopped Green Onion: (to taste)

Seasonings

  • Powdered Soup (from Spicy Ramen): (to taste)
  • Mayonnaise: 1-2 tsp
  • Vegetable Oil: 1 tbsp
  • [A] Soy Sauce: 1 tsp
  • [A] Mirin (Sweet Rice Wine): 1 tsp

Steps

  1. Heat 1 tbsp Vegetable Oil in a frying pan and sauté 100g Chicken thigh until nicely browned.
  2. Add Powdered Soup (from Spicy Ramen) to taste to the sautéed chicken and stir-fry. [Key Point!] Use the powdered soup as seasoning and spice for concentrated flavor.
  3. Temporarily remove the chicken from the pan. Add water to the same pan and bring to a boil.
  4. Once boiling, add 1 packet of Spicy Ramen noodles and the vegetable packet. Cook while loosening the noodles and reducing the liquid.
  5. Cut the avocado in half, peel, and cut into bite-sized pieces.
  6. Add 1-2 tsp Mayonnaise to the cut avocado and mix. [Key Point!] Mayonnaise also helps prevent the avocado from browning.
  7. Once the liquid from the noodles has reduced, add the remaining Powdered Soup (from Spicy Ramen) to your preference and toss to coat.
  8. Add 1 tsp Soy Sauce and 1 tsp Mirin (Sweet Rice Wine) and continue to cook, reducing the liquid further. [Key Point!] The chicken is seasoned beforehand and the noodles are flavored with the soup powder, resulting in a robust taste. Thick, chewy noodles are delicious even when stir-fried.
  9. Return the chicken that was set aside to the frying pan and mix everything together.
  10. Transfer to a serving dish and generously top with the dressed avocado.
  11. Garnish with Shredded Nori Seaweed (to taste) and Chopped Green Onion (to taste).
