  • [A] Mirin (Sweet Rice Wine) 1 tsp
  • [A] Cooking Sake (Rice Wine) 1/2 tbsp
  • [A] Soy Sauce 1/2 tsp

Steps

  1. Wipe off any dirt or scales from the skin of the Cod Fillets with a paper towel.
  2. Place the Cod Fillets in a tray. Rub approx. 1 tsp of sugar on both sides and let sit for 15 minutes to draw out excess moisture and odor.
  3. In a bowl, combine 1 tbsp Miso, 1/2 tsp Sugar, 1 tsp Mirin (Sweet Rice Wine), 1/2 tbsp Cooking Sake (Rice Wine), and 1/2 tsp Soy Sauce. Mix well until there are no lumps of miso to create the miso marinade.
  4. After 15 minutes, thoroughly pat dry the moisture that has emerged from the Cod Fillets with a paper towel.
  5. Lay out a piece of plastic wrap. Lightly spread some of the miso marinade in the area where the Cod Fillets will be placed. Place the Cod Fillets (160g, 2 pieces) skin-side down on the plastic wrap.
  6. Generously spread the remaining miso marinade evenly over the Cod Fillets using a rubber spatula.
  7. Fold the plastic wrap from the bottom, carefully wrapping it while pressing out air. Then, wrap again from the top, also removing air, and fold in the sides, making sure to remove any trapped air. This is the key! Uneven flavor can result from trapped air, so wrapping carefully is crucial.
  8. Marinate in the refrigerator for half a day to a full day. Marinating for a full day is recommended for the flavors to fully penetrate.
  9. Carefully wipe off the miso clinging to the marinated Cod Fillets, especially from the skin, with a paper towel. This is the key! Miso on the skin can easily burn, so be sure to wipe it off thoroughly before cooking.
  10. Add a generous amount of oil to a cold frying pan.
  11. Place the Cod Fillets skin-side down in the frying pan and turn the heat to low.
  12. While cooking, for about 1 to 2 minutes after starting, press down on the Cod Fillets with a turner or spoon to prevent the flesh from curling up.
  13. If the oil reduces while cooking, tilt the pan and pour the oil under the Cod Fillets.
  14. Once the skin is a nice golden brown, flip the fillets and cook the flesh side for about 1 minute until cooked through. Finally, check to ensure it's cooked.
