- Pork Belly Slices 200g
- Potatoes 2-3
- Eggs 2
- Minced Garlic 1 clove
- Warm Cooked Rice 2 servings

- [A] Soy Sauce 1.5 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Sugar 2 tsp
- Olive Oil (as needed)
Steps
- Heat Olive Oil (as needed) in a frying pan.
- Peel and dice Potatoes (2-3).
- Add the diced potatoes to the frying pan and fry until lightly browned.
- Roughly chop Pork Belly Slices (200g) and lightly pound. This technique of chopping and pounding instead of using ground meat adds a more substantial texture and bite.
- Transfer the fried potatoes to paper towels to drain excess oil. Allowing them to air out will make them crisper.
- Using the remaining oil in the same pan, fry Eggs (2) like fried eggs. Cook until the edges are browned. Frying them creates a crispy texture.
- Remove the fried eggs.
- Stir-fry the roughly chopped pork in the oil remaining in the pan.
- Add Minced Garlic (1 clove) and stir-fry. For a more authentic flavor, consider adding spices like cumin or turmeric.
- If desired, drain off any excess fat at this stage.
- Add Sugar (2 tsp), Cooking Sake (Rice Wine) (1 tbsp), and Soy Sauce (1.5 tbsp), and coat everything evenly. For a Chinese-style finish, oyster sauce is also recommended.
- Plate Warm Cooked Rice (2 servings) and top with the stir-fried pork.
- Sprinkle the fried potatoes over the dish.
- Top with the fried eggs to complete. Drizzle with a little Soy Sauce (to taste) if desired.
