- Sweet Potato 200g
- Potato Starch 3 tbsp
Seasonings
- [A] Butter 10g
- [A] Salt 1/4 tsp
- Vegetable Oil (for cooking)
Steps
- Peel and thinly slice 200g of sweet potato into 1mm thick strips.
- Briefly rinse the sliced sweet potato under water and soak it for 5 minutes.
- Drain the sweet potato in a colander and place it in a microwave-safe container.
- Cover with plastic wrap and microwave on 600W for 2 minutes.
- Add 10g of butter and 1/4 tsp of salt to the microwaved sweet potato, and mix until the butter melts.
- Add 3 tbsp of potato starch and mix until evenly coated.
- Heat vegetable oil in a frying pan over medium heat.
- Arrange the sweet potato mixture in the pan to form a flat circle and cook until the bottom is browned.
- Flip the sweet potato patty and cook the other side until it's also well-browned. This is the key! Thoroughly browning the surface will create a crispy texture.
- Once evenly browned, remove from heat and transfer to a plate.
