Easy chewy donuts made with hot cake mix and potatoes. Crispy on the outside, chewy on the inside, these donuts are a simple summer snack that can be made with just 4 ingredients. They are exceptionally delicious when fresh from the fryer.

Ingredients

Main Ingredients (5 donuts)

  • Potato 1 pc (150g)
  • Hot Cake Mix 100g

Seasonings

  • Sugar 1 tsp
  • Water 2 tbsp
  • Frying Oil (to taste)
  • Sugar (for dusting) (to taste)

Steps

  1. Peel the potatoes and remove any eyes.
  2. Cut the potato into 8 pieces, place in a microwave-safe container, cover with plastic wrap, and heat in a 600W microwave for 4 minutes.
  3. Mash the heated potato with a fork or masher until it becomes a smooth paste.
  4. Add 1 tsp sugar and 2 tbsp water to the mashed potato and mix well.
  5. Add 100g hot cake mix to the potato mixture and mix until it starts to crumble.
  6. Knead the mixture in the bowl to form a dough. If the dough is too dry, add a little water at a time to adjust. [Key Tip!] The dough should be slightly soft and feel a bit mushy when pinched.
  7. Divide the dough into 5 portions and shape them into balls.
  8. Flatten the dough balls by pressing down on them, then use a chopstick or similar tool to poke and twist in the center, creating a hole.
  9. Shape the hole into a circle with your fingers. [Key Tip!] The hole will expand when frying, so make sure it's wide enough for 2-3 fingers.
  10. Heat about 2cm of oil in a deep frying pan or pot to medium heat (150-160°C). [Key Tip!] Potatoes can cause burning, so maintain a low-medium heat while frying.
  11. Carefully place the shaped donut dough into the hot oil and fry for 2 to 2.5 minutes on one side until golden brown.
  12. Flip the donuts and fry the other side for 2 to 2.5 minutes until golden brown. Drain excess oil.
  13. While still warm, place sugar (for dusting, to taste) in a food-safe bag. Add the fried donuts and shake to coat evenly. [Key Tip!] If you prefer less sweetness, you can skip this step. If you want them sweeter, coat generously with sugar for a delicious finish.
