Ryuji boasts that these ultimate chicken breast nuggets surpass 'that store.' The mayonnaise makes them incredibly fluffy and juicy, and the homemade honey mustard sauce gives them an authentic flavor. We also introduce a method that allows you to enjoy two textures: chicken breast and ground chicken. These addictive nuggets are easy to make at home.

Ingredients

Main Ingredients (2-3 servings)

  • Chicken Breast 1 piece (300g)
  • Egg 1
  • All-purpose flour 3 tbsp
  • Potato starch 1.5 tbsp
  • Ground chicken 300g (optional)

Seasonings

  • Pure Select Mayonnaise 20g
  • Garlic powder 7 shakes
  • Nutmeg 2 shakes
  • Salt 2/3 tsp
  • MSG(Ajinomoto) 8 shakes
  • Sake 0.5 tbsp
  • Sugar 0.5 tsp
  • Black pepper 4 shakes
  • Oil (1cm depth in the pot)
  • [A] Pure Select Mayonnaise 2 tbsp
  • [A] Yellow Mustard 2 tbsp
  • [A] Honey 1 tbsp
  • Seasoned salt to taste
  • Ketchup to taste

Steps

  1. Remove the skin from the chicken breast.
  2. Slice the chicken breast and chop it roughly with a knife.【Tip!】 This leaves a meaty texture, giving it a homemade nugget feel.
  3. Put the chopped chicken breast into a bowl.
  4. Put 300g of store-bought ground chicken into another bowl.
  5. Add 20g of Pure Select Mayonnaise to each bowl.【Tip!】 The fat content from the mayonnaise adds richness and a fluffy texture.
  6. Add 7 shakes of garlic powder and 2 shakes of nutmeg to each bowl.【Tip!】 Nutmeg removes the gamey smell from meat, and garlic powder enhances the nugget-like flavor.
  7. Add 2/3 tsp of salt and 8 shakes of MSG(Ajinomoto) to each bowl.【Tip!】 Adding MSG(Ajinomoto) creates an umami flavor similar to fast-food restaurants.
  8. Add 0.5 tbsp of sake, 0.5 tsp of sugar, and 1 egg to each bowl.【Tip!】 The egg increases fluffiness and also helps with volume.
  9. Add 3 tbsp of all-purpose flour, 1.5 tbsp of potato starch, and 4 shakes of black pepper to each bowl.
  10. Mix the ingredients in each bowl well until no traces of flour remain.
  11. Make the mustard sauce. In a bowl, add 2 tbsp of Pure Select Mayonnaise, 2 tbsp of yellow mustard, and 1 tbsp of honey.
  12. Mix the sauce ingredients well.
  13. Pour oil (to a depth of 1cm in the pot) into a pot and heat it to about 170℃ over medium heat.
  14. Drop the nugget mixture into the hot oil using a spoon. Be careful not to let the nuggets stick together.
  15. Fry over medium heat until both sides turn golden brown.【Tip!】 The color should be similar to a Poodle's fur as a guideline for doneness.
  16. If the nuggets feel soft when pressed while frying, it means they are not cooked through yet, so flip them over and continue frying, being careful not to burn them.【Tip!】 Be careful not to undercook chicken.
  17. Nuggets made from chicken breast can become tough if overcooked, so even if the fried color is light, you can remove them if they are cooked through.
  18. Nuggets made from ground chicken take longer to cook through, so fry them thoroughly.
  19. Remove the fried nuggets from the oil and drain them.
  20. Arrange the finished nuggets on a plate and serve with the prepared mustard sauce.
