A hearty crab omelet recipe made filling with tofu. It's budget-friendly with less egg and features a fluffy, melt-in-your-mouth texture. Easily made in one pan, it's also exquisite served over rice as a Tianjin-style rice bowl.

  • Tofu 200g
  • Eggs 2
  • Imitation Crab Sticks 2
  • Salt (to taste)

Seasonings

  • [A] Water 100ml
  • [A] Soy Sauce 2 tsp
  • [A] Sugar 1 tsp
  • [A] Sesame Oil 1 tsp
  • [A] Chinese Chicken Stock Powder 1/2 tsp

Steps

  1. In a bowl, dissolve 1 tsp Potato Starch in 100ml Water.
  2. In a separate bowl, combine 2 tsp Soy Sauce, 1 tsp Sugar, 1 tsp Sesame Oil, and 1/2 tsp Chinese Chicken Stock Powder. Mix well to create the sauce. **【Key Tip!】** By preparing this in advance, it will naturally thicken when poured into the pan, making it easy to make.
  3. Add 2 Imitation Crab Sticks, shredded, to the pre-mixed sauce (Step 2) and mix.
  4. In a bowl, place 200g Tofu and mash it into a paste using a whisk or similar tool.
  5. Add 2 Eggs, a pinch of salt, and a pinch of pepper to the bowl with the mashed tofu. Whisk together and mix well. **【Key Tip!】** Using mashed tofu as a filler makes it voluminous even with a small amount of egg.
  6. Lightly oil a frying pan and heat over medium heat.
  7. Pour the tofu and egg mixture (Step 5) into the heated frying pan.
  8. Stir gently as it cooks. When the edges start to set, push them slightly inward to continue cooking.
  9. Once the mixture is slightly thickened and lightly cooked throughout, spread it into a 20cm to 22cm circle across the entire frying pan.
  10. Cover with a lid and steam for 2 minutes over medium heat.
  11. After steaming for 2 minutes, and when the bottom has browned and the mixture has set, carefully slide it onto a plate.
  12. Place the frying pan over the plate and flip them together, returning the tofu crab omelet to the frying pan.
  13. Cook until the other side is also browned. **【Key Tip!】** Even when both sides are well-cooked, the tofu prevents it from becoming tough, resulting in a fluffy, melt-in-your-mouth texture.
  14. Once browned, slide it onto a plate.
  15. Clean the frying pan. Re-mix the imitation crab stick and sauce mixture (Step 3), stirring well to prevent the potato starch from settling, then pour it in.
  16. Stir with a spatula to prevent lumps, and cook until thickened. **【Key Tip!】** Adding sesame oil enhances the Chinese flavor, making it a great match for rice.
  17. Once thickened, pour the sauce over the tofu crab omelet (Step 14) on the plate.
  18. Sprinkle with chopped green onions to taste, and it's ready.
  19. Cut the tofu crab omelet on the plate in half and serve over rice for an even more delicious meal.
