Steps

  1. Briefly rinse the frozen peeled shrimp and let them partially thaw.
  2. In a bowl, rub 1 tbsp Potato Starch into the frozen peeled shrimp to remove any surface impurities or odors.
  3. Rinse off the potato starch and thoroughly pat the peeled shrimp dry with paper towels. This is the key! Wiping off the moisture prevents unwanted odors and oil splatter.
  4. Crack an egg into a separate bowl, reserving the egg yolk for finishing.
  5. Add 4 tbsp Potato Starch, 1/3 tsp Salt, and 1 tsp Tomato Ketchup to the egg white and mix well with a whisk. This is the key! Adding egg white creates a fluffy coating. Mix until the ketchup turns a beautiful rosy color.
