Easily make big, irresistibly delicious sweet potato steamed cakes using hot cake mix and a frying pan. Blending mashed sweet potato into the batter creates a rich flavor and a fluffy, chewy texture. Since you don't need a steamer, you can enjoy an authentic taste with minimal effort. This is a satisfying dish perfect for snacks or a light meal.
Ingredients
Main Ingredients (4-6 servings)
- Sweet Potato 150g
- Hot Cake Mix 150g
- Milk 100ml
- Egg 1 pc
Seasonings
- [A] Sugar 1 tbsp
- [A] Water 1 tbsp
- [B] Sugar 1 tbsp
- [B] Vegetable Oil 1 tbsp
- Black Toasted Sesame Seeds (to taste)
Steps
- Cut 150g of Sweet Potato into 1cm cubes.
- Soak the cut sweet potato in water for about 5 minutes to remove bitterness.
- Line a heat-resistant dish or container with parchment paper. (Pro Tip!) Wetting the parchment paper will make it pliable and easier to line the container.
- Drain the soaked sweet potato well in a colander and transfer to a heat-resistant container.
- Add 1 tbsp of Water and 1 tbsp of Sugar to the sweet potato and mix to coat.
- Cover with plastic wrap and microwave on 600W for 4 minutes.
- After microwaving, mix well. Transfer half of the mixture to a bowl, including any water and sugar at the bottom.
- Mash the sweet potato in the bowl with a fork or masher until no solid pieces remain. (Pro Tip!) Leaving the skin on the sweet potato may cause a color change when it reacts with the baking powder in the hot cake mix. If appearance is a concern, remove the skin before mashing.
- To the mashed sweet potato, add 100ml of Milk, 1 egg, 1 tbsp of Sugar, and 1 tbsp of Vegetable Oil, and mix with the egg.
- Add 150g of Hot Cake Mix to the combined mixture and stir until just combined. (Pro Tip!) Mix quickly until there are no lumps, being careful not to overmix.
- Pour the prepared batter into the lined mold.
- Scatter the reserved sweet potato pieces on top of the batter in the mold.
- Sprinkle with Black Toasted Sesame Seeds, if desired.
- Place the mold containing the ingredients into a deep frying pan or pot.
- Pour hot water into the frying pan from the side, reaching halfway up the mold, being careful not to let water get into the mold.
- Once the water is boiling, cover the pan with a lid, placing a cloth underneath to prevent condensation from dripping onto the cake. Steam over low to medium heat for 15 minutes.
- After 15 minutes of steaming, insert a skewer or pointed object into the center to check if it's cooked through. If it comes out with batter, continue steaming for a few more minutes.
- Once confirmed to be cooked through, carefully remove the mold from the hot water, being mindful of steam to avoid burns.
