  • [A] MSG(Ajinomoto) 7 dashes

Steps

  1. Thaw 270g edamame under running water.
  2. Place 4g bonito flakes powder in a bowl. 【Tip!】 If you don't have bonito flakes powder, heat 4g katsuobushi (bonito flakes) in a microwave and crush it as a substitute.
  3. Add 220cc water to the bowl.
  4. Add 7 dashes of MSG(Ajinomoto) and mix well. 【Tip!】 MSG(Ajinomoto) contains glutamic acid, the same umami component found in konbu (kelp), which creates a deep flavor similar to a blended dashi.
  5. Add 1 tsp salt.
  6. Add 1 tbsp soy sauce to complete the supremely delicious dashi soy sauce.
  7. Place the thawed 270g edamame into a plastic bag.
  8. Pour the prepared dashi soy sauce into the plastic bag, remove the air, and tie the opening tightly. 【Tip!】 Removing the air ensures that even a small amount of seasoning liquid evenly permeates the entire ingredient.
  9. Marinate in the refrigerator for at least 1 hour. Marinating for about 3 hours will allow the flavors to penetrate even more. 【Tip!】 Immediately after marinating, the bonito flavor might be strong, but as it marinates longer, the aroma mellows and the flavor becomes more integrated and delicious.
  10. Serve the marinated edamame on a plate and it's ready.
