This is an exquisite recipe for steaming fresh, seasonal new onions in the microwave until they become incredibly tender. Steps

  1. Prepare 2 new onions.
  2. Trim off the top and root ends of the new onions with a knife.
  3. Using the heel of your knife, peel the skin off the new onions in large vertical strips. Carefully peel off the thin inner skins with your fingernails. (Key Technique!) New onion skins can be tricky to remove, but using the heel of your knife will make the process smoother.
  4. Wrap the peeled new onions individually in plastic wrap and store them in the vegetable crisper drawer of your refrigerator.
  5. Place the 2 new onions, unwrapped, in a microwave-safe dish.
  6. Microwave uncovered at 600W for 4 minutes.
  7. Remove from the microwave, flip the onions over, turn the dish upside down, and microwave again at 600W for 4 minutes.
  8. After microwaving, insert a toothpick into the onion. If there are still firm parts, add 1 minute of additional heating at a time to check for doneness.
  9. Wrap the hot new onions in aluminum foil and let them rest for 8 minutes, the same duration as the microwave heating, to cook through with residual heat. (Key Technique!) This residual cooking (wrapping in foil and letting it sit) after microwaving makes them melt-in-your-mouth tender and juicy, enhancing their sweetness. It cooks the vegetables gently without any off-flavors.
  10. Place 2 tbsp of Mirin (Sweet Rice Wine) in a microwave-safe bowl and microwave for 30 seconds to evaporate the alcohol.
  11. Add 2 tbsp of Miso to the microwaved mirin and stir until the miso is completely dissolved.
  12. For added flavor, add 3 pinches of Toasted Sesame Seeds and crush them with your hands as you mix. (Key Technique!) Considering the sweetness of the new onions, making the miso sauce slightly less sweet creates a good balance. Adjust the saltiness based on the miso you use.
  13. Plate the steamed new onions on small dishes and drizzle with the prepared miso sauce.
