- Bean Sprouts 1 bag
- Pork Belly Slices 80-100g
Seasonings
- Salt, pinch
- [A] Oyster Sauce 1/2 tbsp
- [A] Soy Sauce 1 tbsp
- [A] Grated Garlic 1 clove
- Sesame Oil (or Vegetable Oil) 1 tsp
- Coarse Black Pepper, to taste
Steps
- Briefly rinse 1 bag of bean sprouts and soak them in water. (Key Tip!) Soaking them in water helps maintain their crisp texture.
- Cut 80-100g of pork belly slices into 2-3cm pieces.
- Season the cut pork with a pinch of salt and massage it in.
- In a bowl, combine 1/2 tbsp oyster sauce, 1 tbsp soy sauce, and 1 clove grated garlic. Mix well to create the sauce.
- Heat a little sesame oil (or vegetable oil) in a frying pan and stir-fry the pork. (Key Tip!) Pork releases a lot of oil, so use a small amount. Stir-fry well to draw out the delicious fat.
- Thoroughly drain the water from the bean sprouts that were soaked.
- Once the delicious oil has rendered from the pork, increase the heat to high. Add the drained bean sprouts to the frying pan and stir-fry to coat them with the oil. (Key Tip!) Stir-frying over high heat ensures the bean sprouts remain crisp. Instead of tossing, stir-fry like on a griddle and coat with oil to prevent moisture release.
- Once the bean sprouts have absorbed the savory flavor of the pork, add the prepared sauce and toss to coat everything.
- Once everything is combined, toss the pan to distribute the sauce evenly.
- Plate the dish and generously sprinkle with coarse black pepper, if desired.
