Steps

  1. Finely chop the Sausage.
  2. Finely chop the Hokkaido Tokachi Fresh Mozzarella and pat it dry. (Key Tip!) Patting it dry prevents excess moisture, allowing the rice and mozzarella to meld well.
  3. Whisk the Egg.
  4. Heat a frying pan and add a small amount of Vegetable Oil.
  5. Add the Cooked Rice to the heated pan and stir-fry, breaking it up thoroughly.
  6. Add the Onion, Scallions, and chopped Sausage, and continue to stir-fry.
  7. Lightly season with Salt to taste.
  8. Add Pepper.
  9. Add the scallions, and then add the chopped Hokkaido Tokachi Fresh Mozzarella, breaking it up as much as possible.
  10. Turn off the heat, cover, and let the residual heat melt the mozzarella. (Key Tip!) Melting the mozzarella with residual heat helps to bind the rice grains, resulting in a mellow flavor.
  11. In a separate frying pan, add a small amount of Vegetable Oil and make a sunny-side-up egg with the whisked Egg.
  12. Sprinkle Salt on the sunny-side-up egg, cover, and turn off the heat.
  13. For the baked rice, optionally mix in Parmesan Cheese lightly, and sprinkle with more Pepper.
  14. Plate the baked rice.
  15. Top the baked rice with the prepared sunny-side-up egg.
  16. Optionally, sprinkle with more Parmesan Cheese and Pepper to finish. Enjoy!
