  • Yakisoba noodles 2 portions
  • Scallions 20g
  • Cilantro 20g
  • Garlic 2 cloves
  • Dried Chili Peppers 4-5

Seasonings

  • [A] Sesame Oil 1 tbsp
  • Taihaku Sesame Oil 2 tbsp
  • [B] Taihaku Sesame Oil 1 tbsp
  • [C] Cooking Sake (Rice Wine) 1 tbsp
  • [C] Oyster Sauce 2 tbsp
  • [C] Water 2 tbsp
  • [C] Pepper a pinch
  • Sesame Oil for drizzling (to taste)

Steps

  1. In a bowl, place 2 portions of yakisoba noodles, add 1 tsp of soy sauce and 1 tbsp of sesame oil, and loosen the noodles.
  2. Cover the noodles with plastic wrap and heat in a 600W microwave for about 2 minutes.
  3. Roughly chop the scallions and cilantro.
  4. Wrap the garlic cloves in plastic wrap or similar and crush them with the back of a knife.
  5. Briefly boil the crushed garlic in boiling water, then pat dry. [This is the secret! ] Boiling for a short time enhances the flavor and prevents burning.
  6. Heat 2 tbsp of Taihaku sesame oil in a frying pan, add the dried garlic, and slowly stir-fry over low heat.
  7. Once the garlic turns golden and fragrant, add the dried chili peppers to your liking and stir-fry, then set aside.
  8. In the same frying pan, spread out the microwave-heated yakisoba noodles and grill both sides until nicely browned.
  9. Once grilled, transfer the noodles to a plate lined with paper towels.
  10. Add 1 tbsp of Taihaku sesame oil to the frying pan and stir-fry the chopped scallions and cilantro.
  11. Return the reserved garlic and dried chili peppers to the frying pan.
  12. Next, add 1 tbsp of cooking sake (rice wine), 2 tbsp of oyster sauce, 2 tbsp of water, and a pinch of pepper and mix well.
  13. Add the yakisoba noodles that were set aside to the frying pan and stir-fry until evenly coated with the sauce.
  14. Finally, turn up the heat to high and drizzle with sesame oil for drizzling (to taste) to finish.
