Steps

- Cover the noodles with plastic wrap and heat in a 600W microwave for about 2 minutes.
- Roughly chop the scallions and cilantro.
- Wrap the garlic cloves in plastic wrap or similar and crush them with the back of a knife.
- Briefly boil the crushed garlic in boiling water, then pat dry. [This is the secret! ] Boiling for a short time enhances the flavor and prevents burning.
- Heat 2 tbsp of Taihaku sesame oil in a frying pan, add the dried garlic, and slowly stir-fry over low heat.
- Once the garlic turns golden and fragrant, add the dried chili peppers to your liking and stir-fry, then set aside.
- In the same frying pan, spread out the microwave-heated yakisoba noodles and grill both sides until nicely browned.
- Once grilled, transfer the noodles to a plate lined with paper towels.
- Add 1 tbsp of Taihaku sesame oil to the frying pan and stir-fry the chopped scallions and cilantro.
- Return the reserved garlic and dried chili peppers to the frying pan.
- Next, add 1 tbsp of cooking sake (rice wine), 2 tbsp of oyster sauce, 2 tbsp of water, and a pinch of pepper and mix well.
- Add the yakisoba noodles that were set aside to the frying pan and stir-fry until evenly coated with the sauce.
- Finally, turn up the heat to high and drizzle with sesame oil for drizzling (to taste) to finish.
