This recipe features a voluminous 'Teriyaki Egg Chicken Pizza' made with high-protein chicken breast, used as the pizza crust without any flour. Ingredients

Main Ingredients (2-3 servings)

  • Chicken Breast 1 piece (300g)
  • Potato Starch 2 tbsp
  • Eggs 2
  • Onion 1/8 piece (30g)
  • Mixed Cheese 30g

Seasonings

  • [A] Soy Sauce 1 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Sugar 2 tsp
  • [A] Salt and Pepper to taste
  • [B] Mayonnaise 1 tbsp
  • [B] Salt and Pepper to taste
  • Mayonnaise (for topping) as needed

Steps

  1. Crack 2 eggs into a heatproof bowl and pierce the yolks a few times.
  2. Cover with plastic wrap and microwave at 600W for 1 to 1 minute 15 seconds. Key Tip! Watch carefully during heating to prevent it from exploding.
  3. Remove the egg from the microwave, break it up, and mix thoroughly.
  4. Add 1 tbsp Mayonnaise and a pinch of Salt and Pepper to the egg and mix well.
  5. Thinly slice 1/8 Onion (30g).
  6. Remove the skin from 1 Chicken Breast (300g) and slice it open into two pieces.
  7. Cut the opened chicken breast into large pieces, then thinly slice them into approximately 1cm width.
  8. Finely chop the chicken skin and add it to the bowl with the chicken. Key Tip! Adding chicken skin enhances the richness, but you can omit it if you dislike it.
  9. Add 1 tbsp Soy Sauce, 1 tbsp Mirin (Sweet Rice Wine), 2 tsp Sugar, a pinch of Salt and Pepper, and 2 tbsp Potato Starch to the bowl with the chicken.
  10. Knead the seasonings into the chicken and mix well. Key Tip! Kneading in potato starch will result in a tender texture.
  11. Lightly oil a frying pan and spread the seasoned chicken in a flat circle approximately 24cm in diameter.
  12. Heat over medium heat and cook until browned.
  13. Once browned and the crust moves freely, turn off the heat.
  14. Place parchment paper and a plate over the pan, then flip it over and remove from the pan. Key Tip! Using parchment paper makes it easier to flip and maintain the shape.
  15. Spread Mayonnaise as needed on the surface of the cooked chicken crust.
  16. Add the thinly sliced onion and the egg paste.
  17. Sprinkle 30g Mixed Cheese over the top.
  18. Lift the pizza with the parchment paper and return it to the frying pan.
  19. Cover with a lid and steam for 2 and a half minutes over medium heat.
  20. Transfer to a fish grill or toaster and bake until browned.
  21. Sprinkle with chopped scallions.
