Main Ingredients (3 individual puddings)
- 165g Cooked Azuki Beans
- 250ml Milk
- 5g Gelatin Powder

- Sweetener (to taste)
Steps
- In a bowl, add the 165g of cooked azuki beans and a small portion of the 250ml of milk. Mix well until incorporated. (Tip: Adding all the milk at once makes it difficult to mix, so add it in small portions.)
- Add the remaining milk and mix thoroughly until uniform.
- Taste and adjust sweetness if needed by adding your preferred sweetener.
- Add the 5g of gelatin powder directly (do not pre-soak) and mix well.
- Heat the well-mixed liquid in a microwave (600W) for 2 minutes and 30 seconds.
- After heating, stir well for 1-2 minutes until the gelatin is completely dissolved. (Tip: The ideal temperature is 70-80°C. If it's not warm enough, add an additional 30 seconds of heating. Check for any undissolved transparent gelatin particles around the edges.)
- Prepare an ice bath in a separate bowl. Place the bowl containing the gelatin mixture into the ice bath and cool for about 5 minutes. Stir occasionally while being careful not to let water get into the mixture, until it reaches body temperature (around 37°C). (Tip: Cooling in an ice bath quickly sets the gelatin and prevents separation. Overcooling can lead to layers, so aim for body temperature.)
- Pour the cooled mixture into your desired containers (e.g., small containers or ta**ppers of about 130ml capacity).
- Loosely cover the containers with plastic wrap and chill in the refrigerator for 2-3 hours until set.
- Remove from the refrigerator and top with extra cooked azuki beans if desired. Enjoy!
