This recipe for addictive, devilishly delicious pickled pumpkin is made by simply marinating it in a flavorful sauce. Cooked easily in the microwave, the pumpkin is then marinated in a sweet and sour soy sauce base, offering a delightful fluffy texture and refreshing taste. - Pumpkin 1/4 (350g including seeds and pulp)
- Onion 1/2 (100g)
Seasonings
- [A] Water 100ml
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [A] Sugar 1 tbsp
- [A] Soy Sauce 3 tbsp
- [A] Vinegar 1 tbsp
- [A] Sesame Oil 1 tbsp
- [A] Grated Garlic 1 tsp
- [A] Grated Ginger 1 tsp
- [A] Dashi Granules 1/4 tsp
Steps
- Peel and thinly slice half an onion.
- In a microwave-safe container, combine 100ml water, 1 tbsp mirin, 1 tbsp sugar, and the sliced onion. Microwave lightly.
- Then, add 3 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sesame oil, 1 tsp grated garlic, 1 tsp grated ginger, and 1/4 tsp dashi granules. Mix everything together. This is the secret! Lightly microwaving the onion brings out its sweetness and helps it meld with the marinade.
- Remove the seeds and pulp from 350g pumpkin using a spoon.
- Slice the pumpkin into 5mm thick pieces.
- Further cut the pumpkin into bite-sized pieces and arrange them on a microwave-safe plate.
- Cover the plate with pumpkin with plastic wrap and microwave for about 3 minutes and 30 seconds.
- Once the pumpkin is cooked through enough for a chopstick to pierce it easily, place it into the prepared marinade.
- Submerge the pumpkin in the marinade and cover it tightly with plastic wrap.
- Marinate for 1 hour. This is the secret! To prevent the flavor from becoming too strong, if you are making this for meal prep, drain the marinade and store as needed, checking the taste periodically.
