Simply cut the deseeded cucumbers into diagonal slices, mix with a special sauce, and it's ready! Perfect as a homemade side dish that goes well with rice, adding an extra touch to your meal.

Ingredients

Main Ingredients (2 servings)

  • Cucumbers 2
  • Ginger, julienned 1 clove

Seasonings

  • Soy Sauce 2 tbsp
  • Vinegar 2 tbsp
  • Sugar 1 tbsp
  • Sesame Oil 1 tsp

Steps

  1. Wash 2 cucumbers, and if necessary, rub them with salt to tenderize.
  2. Cut the cucumbers in half lengthwise.
  3. Remove the seeds from the lengthwise cut cucumbers using a spoon. This step prevents excess moisture and makes them suitable for storing in the refrigerator.
  4. Slice the deseeded cucumbers diagonally. Slicing them diagonally after cutting in half lengthwise makes them easier to eat and prepare.
  5. Julienned 1 clove of ginger.
  6. Place the cut cucumbers into a sealable enamel container.
  7. Add 1 tbsp of sugar and the julienned ginger to the container.
  8. Add 2 tbsp of soy sauce.
  9. Add 2 tbsp of vinegar.
  10. Mix everything thoroughly.
  11. Finally, add 1 tsp of sesame oil and mix well.
  12. Let it sit for a few minutes to enjoy as a quick pickle. The pickling liquid can also be used to marinate other vegetables like daikon radish, carrots, or celery.
