Shepherd's pie with miso as a hidden flavor enhancer. Cooked quickly in the microwave and served directly from the gratin dish to the table. A rich and creamy dish perfect for year-end gatherings.

Ingredients

Main Ingredients (3-4 servings)

  • 1/2 Onion
  • 200g Ground Beef and Pork Mix
  • 2 tsp Rice Flour
  • 2 Medium Potatoes
  • 4-5 tbsp Milk
  • 30g Mixed Cheese

Seasonings

  • [A] 1 tbsp Ketchup
  • [A] 1 tbsp Worcestershire Sauce
  • [A] 1 tsp Sugar
  • [A] 1 tsp Miso Paste
  • Pinch of Salt
  • Pinch of Pepper
  • [B] 1/2 tsp Salt
  • [B] Pinch of Pepper

Steps

  1. Finely chop 1/2 Onion (120g).
  2. In a bowl, mix together 1 tbsp Ketchup, 1 tbsp Worcestershire Sauce, 1 tsp Sugar, and 1 tsp Miso Paste.
  3. Peel 2 Medium Potatoes (250g), remove any eyes, and cut into 8 pieces each.
  4. Place the potatoes in a microwave-safe container, cover with plastic wrap, and heat for 7 minutes at 600W.
  5. Heat Vegetable Oil in a frying pan over medium heat.
  6. Add the chopped onion and sauté until softened.
  7. Once the onion is softened, add 200g Ground Beef and Pork Mix and cook together.
  8. Once the ground meat is cooked, turn off the heat momentarily and coat evenly with 2 tsp Rice Flour.
  9. Add the prepared sauce mixture (ketchup, Worcestershire sauce, sugar, miso) to the pan with the ground meat and cook over medium heat until thickened.
  10. Once the sauce has coated everything and thickened, season with a pinch of Salt and a pinch of Pepper.
  11. Spread the cooked ground meat evenly in a heatproof dish such as a baking tray or gratin dish.
  12. Mash the microwaved potatoes with a fork or masher. (Key Tip!) For a more delicious outcome, mash thoroughly until no lumps remain.
  13. Add 1/2 tsp Salt, a pinch of Pepper, and 1 tbsp Milk at a time to the mashed potatoes, mixing until smooth. The amount of milk will vary depending on the potato's moisture content, but aim for a consistency looser than mashed potatoes, about 4-5 tablespoons. It's best to make it a bit loose as moisture will evaporate during baking.
  14. After mixing in the milk, incorporate 30g Mixed Cheese.
  15. Spread the mashed potato mixture over the ground meat layer in the heatproof dish.
  16. Create diagonal lines on the surface of the mashed potatoes using chopsticks or a fork.
  17. Grill or toast until the surface is golden brown.
  18. Your Miso Shepherd's Pie is complete!
