Shepherd's pie with miso as a hidden flavor enhancer. Cooked quickly in the microwave and served directly from the gratin dish to the table. A rich and creamy dish perfect for year-end gatherings.
Ingredients
Main Ingredients (3-4 servings)
- 1/2 Onion
- 200g Ground Beef and Pork Mix
- 2 tsp Rice Flour
- 2 Medium Potatoes
- 4-5 tbsp Milk
- 30g Mixed Cheese
Seasonings
- [A] 1 tbsp Ketchup
- [A] 1 tbsp Worcestershire Sauce
- [A] 1 tsp Sugar
- [A] 1 tsp Miso Paste
- Pinch of Salt
- Pinch of Pepper
- [B] 1/2 tsp Salt
- [B] Pinch of Pepper
Steps
- Finely chop 1/2 Onion (120g).
- In a bowl, mix together 1 tbsp Ketchup, 1 tbsp Worcestershire Sauce, 1 tsp Sugar, and 1 tsp Miso Paste.
- Peel 2 Medium Potatoes (250g), remove any eyes, and cut into 8 pieces each.
- Place the potatoes in a microwave-safe container, cover with plastic wrap, and heat for 7 minutes at 600W.
- Heat Vegetable Oil in a frying pan over medium heat.
- Add the chopped onion and sauté until softened.
- Once the onion is softened, add 200g Ground Beef and Pork Mix and cook together.
- Once the ground meat is cooked, turn off the heat momentarily and coat evenly with 2 tsp Rice Flour.
- Add the prepared sauce mixture (ketchup, Worcestershire sauce, sugar, miso) to the pan with the ground meat and cook over medium heat until thickened.
- Once the sauce has coated everything and thickened, season with a pinch of Salt and a pinch of Pepper.
- Spread the cooked ground meat evenly in a heatproof dish such as a baking tray or gratin dish.
- Mash the microwaved potatoes with a fork or masher. (Key Tip!) For a more delicious outcome, mash thoroughly until no lumps remain.
- Add 1/2 tsp Salt, a pinch of Pepper, and 1 tbsp Milk at a time to the mashed potatoes, mixing until smooth. The amount of milk will vary depending on the potato's moisture content, but aim for a consistency looser than mashed potatoes, about 4-5 tablespoons. It's best to make it a bit loose as moisture will evaporate during baking.
- After mixing in the milk, incorporate 30g Mixed Cheese.
- Spread the mashed potato mixture over the ground meat layer in the heatproof dish.
- Create diagonal lines on the surface of the mashed potatoes using chopsticks or a fork.
- Grill or toast until the surface is golden brown.
- Your Miso Shepherd's Pie is complete!
