  • Potatoes 2
  • Chili Peppers 2
  • Green Onion 1/2 tbsp (chopped)
  • Ginger 1/2 tbsp

Seasonings

  • Taihaku Sesame Oil 1 tbsp
  • Shaoxing Wine 1 tbsp
  • [A] Soy Sauce 1 tsp
  • [A] Sugar 1/2 tsp
  • Fish Sauce 1 tbsp
  • Sesame Oil 1 tbsp

Steps

  1. Shred 2 potatoes into fine strips. This is the key! Cutting them to an even thickness ensures they cook uniformly.
  2. Heat 1 tbsp of Taihaku Sesame Oil in a frying pan over medium heat.
  3. Add 2 chili peppers and the 2 shredded potatoes to the hot pan and stir-fry over medium heat. This is the key! Do not rinse the potatoes with water, as their starch contributes to the deliciousness.
  4. Once the potatoes become translucent, add 1/2 tbsp ginger and 1/2 tbsp chopped green onion and continue to stir-fry.
  5. Add 1 tbsp Shaoxing Wine, 1 tsp Soy Sauce, and 1/2 tsp Sugar, and mix well.
  6. When the starch from the potatoes thickens the sauce, add 1 tbsp Fish Sauce and toss everything together with large movements.
  7. Finish by drizzling 1 tbsp Sesame Oil over the stir-fry, mixing quickly, then transfer to a plate and serve. It's ready!
