An easy recipe to make by simply mixing and cooking enoki mushrooms and eggs. This healthy side dish offers a perfect balance of crunchy enoki and sweet egg. It's also ideal for bento boxes. Ingredients

  • Enoki mushrooms 200g
  • Eggs 2
  • Potato Starch 2 tbsp
  • Pork Belly Sliced 100g
  • Onion 1/2
  • Melting Cheese 30g

Seasonings

  • Salt and pepper (to taste)
  • Vegetable Oil (to taste)
  • [Sesame Sauce] Ground Sesame Seeds 2 tbsp
  • [Sesame Sauce] Vinegar 1 tbsp
  • [Sesame Sauce] Soy Sauce 1 tsp
  • [Sesame Sauce] Sugar 1 tsp
  • [Sesame Sauce] Grated Garlic 1/2 tsp
  • [Sesame Sauce] Sesame Oil 1/2 tbsp

Steps

  1. Mix together ground sesame seeds, sugar, soy sauce, vinegar, sesame oil, and grated garlic. [Here's the trick!] Mix thoroughly until the grainy texture of the sugar disappears.
  2. Trim the root and tough base of the enoki mushrooms and chop them into 1cm pieces.
  3. Place the chopped enoki mushrooms in a bowl and separate the strands by hand.
  4. Crack 2 eggs into the bowl and mix them with the enoki mushrooms while whisking.
  5. Add potato starch and salt and pepper, and mix well.
  6. Lightly grease a frying pan with vegetable oil and spread it evenly over medium heat.
  7. Pour the enoki egg mixture into the pan, spread it evenly, and reduce the heat to low.
  8. Press down to ensure it binds together well and shape it.
  9. Cover with a lid and cook on low heat for 4-5 minutes until golden brown.
  10. Use the frying pan lid to flip the roll and cook the other side until golden brown. [Here's the trick!] Using the frying pan lid makes it easy to flip the fragile mixture. Be careful not to burn yourself.
  11. Once both sides are golden brown, turn off the heat and it's ready.
  12. For the variation, trim the root and tough base of the enoki mushrooms and chop them into 1cm pieces.
  13. Place the chopped enoki mushrooms in a bowl and separate the strands by hand.
  14. Trim the core from the onion, slice it thinly, and add it to the bowl.
  15. Cut the pork belly in half.
  16. Crack eggs into the bowl and mix them with the enoki mushrooms and onion while whisking.
  17. Add potato starch and salt and pepper, and mix well.
  18. Lightly grease a frying pan with vegetable oil and spread it evenly over medium heat.
  19. Pour the mixed batter into the pan, reduce the heat to low, and spread it evenly.
  20. Arrange the pork slices in a criss-cross pattern and generously top with melting cheese.
  21. Cover with a lid and cook on low heat for 4-5 minutes.
  22. Turn off the heat and flip using the frying pan lid. Be careful not to burn yourself.
  23. Return to low heat, gently press down, cover with a lid, and steam for about 2 minutes.
  24. Remove the lid and cook uncovered until golden brown.
  25. Once both sides have a nice golden brown color, turn off the heat and it's ready.
