An economical recipe that can be made for just $1! These cute, perfectly round omelets are made by hollowing out eggplant. They are easy to make by simply pan-frying, and are very filling. They're also great for lunch boxes. Please try this dish where the exquisite blend of creamy eggplant, cheese, and imitation crab meat is a perfect match.

- Eggplant 1 (approx. 150g)
- Imitation Crab Sticks 3 sticks
- Mixed Cheese 30g
- Egg 1
Seasonings
- Salt 1/4 tsp
Steps
- Cut off the stem of 1 eggplant (approx. 150g) and slice into 1-1.5cm thick rounds.
- Soak the sliced eggplant in water for about 5 minutes to remove bitterness.
- Finely chop 3 imitation crab sticks into 1cm pieces and shred them using the side of your knife.
- Carefully hollow out the center of the eggplant slices with a plastic bottle cap. Use a pointed object for easier hollowing. If a cap is unavailable or doesn't fit, use a spoon.
- Finely tear the hollowed-out eggplant pieces and place them in a bowl.
- Finely chop the outer edges of the eggplant with a knife and add them to the bowl.
- Sprinkle 1/4 tsp salt over the eggplant in the bowl and gently massage until softened.
- Squeeze out the water from the salted eggplant and add it to the bowl along with the shredded imitation crab sticks.
- Add 30g mixed cheese and 1 egg to the bowl, then mix everything together while lightly beating.
- Lightly oil a frying pan and heat over medium heat.
- Once the pan is hot, arrange the hollowed-out eggplant rounds and spoon the mixed filling into the center of each.
- Cook until the bottom side is golden brown.
- Once browned, flip the omelets and cook the other side. Adjust and add oil as needed during cooking.
- Once both sides are golden brown, transfer to a plate.
- If the flavor is too bland, serve with your favorite condiments such as soy sauce.
