A fuss-free onion potato pizza recipe that's easy to make without yeast or proofing. The chewy dough, infused with mashed potatoes, and the sweetness of fresh onions create a perfect harmony, resulting in a simple yet satisfying dish. It can be made in a frying pan or an oven, so please give it a try.
Ingredients
Main Ingredients (2 pizzas)
- Potato 1 pc (approx. 150g)
- Bread Flour 100g
- Onion Small 1 pc (approx. 150g)
- Mixed Cheese 60g
- Water 70g
- Baking Powder 2g
Seasonings
- Salt 1/4 tsp
- Olive Oil 2 tsp
- [A] Mayonnaise (to taste)
- [A] Salt (to taste)
- [A] Coarsely Ground Black Pepper (to taste)
Steps
- Peel and thinly slice the onion (approx. 150g). Spread on paper towels and expose to air to mellow out its pungency. (This is the key!) Exposing to air helps remove pungent flavor and moisture, ensuring a non-sticky and delicious result.
- Peel the potato (approx. 150g), remove any eyes, and cut into roughly 8 pieces.
- Place the cut potato pieces in a microwave-safe bowl, cover with plastic wrap, and microwave on 600W for 4 minutes.
- Mash the microwaved potato thoroughly with a fork or masher until it loses its shape.
- Add 70g of water to the mashed potato and mix well.
- In a separate bowl, combine 100g of bread flour, 2g of baking powder, 2 tsp of olive oil, and 1/4 tsp of salt. Mix with chopsticks to prevent sticking.
- Once the mixture becomes crumbly, gather the ingredients in the bowl and knead for about 5 minutes until smooth.
- Shape the kneaded dough into a ball, place it in the bowl, cover with plastic wrap, and let it rest for 10 minutes.
- Divide the rested dough into 2 equal portions and shape them into balls.
- Lightly grease a frying pan with olive oil.
- On the frying pan, spread and press the dough to form a circle of about 22cm in diameter.
- Cook the dough over medium heat for about 4 minutes until the bottom is lightly browned.
- Once browned, flip the dough and turn off the heat.
- Drizzle mayonnaise (to taste) in a striped pattern over the entire surface of the flipped dough.
- Arrange half of the prepared onion on top of the dough.
- Sprinkle salt (to taste) all over, then scatter 60g of mixed cheese.
- Sprinkle coarsely ground black pepper (to taste).
- Cover with a lid and cook over low heat for about 6 minutes, or until the cheese is melted and browned.
- Once the cheese is melted and browned, it's ready.
- If you prefer more browning on the cheese, you can grill it.
- Cook the second pizza dough in the same way in the frying pan. Alternatively, if using an oven, place the topped dough on a baking sheet and bake in a preheated oven at 200°C (390°F) for 12-15 minutes.
