This recipe introduces two versions: an easy version using frozen seafood mix and an authentic version with fresh seafood. It's a must-try for fans, drawing out umami with MSG(Ajinomoto) and finishing with rich butter and garlic flavor.

Ingredients

Main Ingredients (1-2 servings)

  • Cooked rice 200g
  • Frozen seafood mix 100g
  • Egg 1
  • Mushrooms 40g
  • Garlic 10g
  • Butter 10g
  • Shrimp (with shell) 5 pieces
  • Octopus 50g
  • Squid 1/2 (60-70g)

Seasonings

  • [A] Water 200cc (for thawing)
  • [A] Salt 1 tsp (for thawing)
  • Olive oil 1 tbsp
  • Salt 1/2 tsp
  • MSG(Ajinomoto) 6 shakes
  • Black pepper to taste
  • Sake 1 tbsp
  • White wine 1 tbsp
  • Dried parsley to taste
  • Hot sauce to taste (for flavor change)

Steps

  1. Dissolve 200cc water and 1 tsp salt in a bowl, then soak 100g frozen seafood mix to thaw. 【Pro Tip!】 Thawing in salt water gives a plump texture.
  2. Slice 40g mushrooms.
  3. Rinse the thawed 100g frozen seafood mix under water to remove salt.
  4. For the washed seafood mix, devein the shrimp if necessary, and cut the squid in half.
  5. Heat 200g cooked rice in the microwave to thaw (if frozen).
  6. In a frying pan, add 10g butter, 1 tsp olive oil, and 10g garlic, then sauté. 【Pro Tip!】 Adding olive oil enhances the flavor.
  7. Crack 1 egg into the pan where the garlic was sautéed, cook it like a sunny-side up egg, lightly frying both sides. 【Pro Tip!】 Cooking it as a sunny-side up egg instead of scrambled egg creates different textures and aromas from the egg white and yolk.
  8. To the pan where the egg was cooked, add the prepared 100g frozen seafood mix and sliced 40g mushrooms, then sauté.
  9. Add 200g cooked rice, 1/2 tsp salt, 6 shakes MSG(Ajinomoto), and black pepper to taste, then stir-fry while breaking up the rice. 【Pro Tip!】 Adding MSG(Ajinomoto) enhances the umami of the seafood.
  10. Finally, add 1 tbsp sake and stir-fry until fluffy.
  11. Plate the dish and sprinkle with dried parsley to taste.
  12. Peel the shells off 5 shrimp (with shell) and remove the veins.
  13. Thinly slice 50g octopus.
  14. Remove the bone and innards from 1/2 squid, peel the skin, then cut into appropriate sizes. Also, carefully remove the suckers from the tentacles. 【Pro Tip!】 It's recommended to peel the skin as it can be tough.
  15. Mince 10g garlic.
  16. Heat 1 tbsp olive oil in a frying pan, add the peeled shrimp shells and sauté to infuse the oil with shrimp flavor, then remove the shells. 【Pro Tip!】 Sautéing shrimp shells creates fragrant shrimp oil.
  17. To the pan with the remaining shrimp oil, add 10g butter and minced 10g garlic, then sauté.
  18. Crack 1 egg into the pan where the garlic was sautéed, cook it like a sunny-side up egg, lightly frying both sides.
  19. To the pan where the egg was cooked, add the prepared 5 shrimp (with shell), 50g octopus, 1/2 squid, and sliced 40g mushrooms, then sauté.
  20. Add 200g cooked rice, 1/2 tsp salt, 6 shakes MSG(Ajinomoto), and black pepper to taste, then stir-fry while breaking up the rice.
  21. Finally, add 1 tbsp white wine and stir-fry until fluffy.
  22. Plate the dish and sprinkle with dried parsley to taste. Optionally, drizzle with hot sauce to taste.
