So easy, just slice and sear, yet incredibly delicious! This dish features seasonal new onions and deep-fried tofu, finished with a savory dashi-infused Japanese-style cheese that makes everything wonderfully melty. Perfect as a side dish for rice or as a tasty appetizer.

- 1 large new onion (250g)
- 1 block deep-fried tofu (atsuage)
- 30g mixed cheese
Seasonings
- [A] 3 tbsp water
- [A] 2/3 tsp dashi powder
Steps
- In a bowl, combine 3 tbsp water and 2/3 tsp dashi powder and mix well.
- Cut 1 block of deep-fried tofu into 6 equal pieces.
- Trim the root and tip ends of 1 new onion (250g). Slice into 8 wedges, stopping just short of the root. (This is the key!) Keeping the core intact prevents the onion from falling apart, allowing for efficient cooking.
- Lightly oil a frying pan and heat over medium heat.
- Once the pan is warm, arrange the sliced new onions cut-side down. Place the deep-fried tofu pieces in the gaps evenly. Sear until golden brown.
- Once the new onions and deep-fried tofu are browned, flip them over.
- Reduce the heat to low, and pour the prepared seasoned mixture around the edges of the frying pan.
- Cover with a lid and steam-grill over low heat for 7 minutes.
- Sprinkle 30g of mixed cheese evenly over the top.
- Cover again with the lid and steam-grill over low heat for 3 minutes.
- Plate the finished "Melt-Yaki New Onion".
