Ingredients

Main Ingredients (Serves 4)

  • Pork Mince (thinly sliced pork shoulder) 300g
  • Onion 1 (200g)

Seasonings

  • [A] Soy Sauce 2 tbsp
  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Sugar 1 tbsp
  • [A] Grated Garlic 1 tsp
  • [A] Grated Ginger 1 tsp
  • Sesame Oil 2 tsp
  • Salt and Pepper (to taste)
  • Vegetable Oil 1 tbsp

Steps

  1. Finely chop the pork mince (300g).
  2. Place the chopped pork in a frying pan and mince it by pounding with a wooden spatula.
  3. Add Soy Sauce (2 tbsp), Cooking Sake (Rice Wine) (1 tbsp), Mirin (Sweet Rice Wine) (1 tbsp), Sugar (1 tbsp), Grated Garlic (1 tsp), and Grated Ginger (1 tsp) to the minced pork and mix well.
  4. Peel and finely chop the onion (1, 200g).
  5. Heat Vegetable Oil (1 tbsp) in a frying pan over medium heat.
  6. Add the chopped onion and stir-fry over medium heat until softened and translucent.
  7. Once the onion has softened, push it to one side of the frying pan.
  8. Add the seasoned pork to the empty space and stir-fry while breaking it apart.
  9. Once the pork changes color, stir-fry it with the onion and continue to cook over medium heat until the released moisture evaporates.
  10. (Key Tip!) If there are large chunks of meat, break them down with a wooden spatula while stir-frying to create a finely crumbled texture for a beautiful finish.
  11. Once the moisture has evaporated, add Sesame Oil (2 tsp) and Salt and Pepper (to taste), stir to combine, and adjust seasoning.
  12. Stir everything together. The Pork Mince Soboro is complete.
