An easy broccoli salad made entirely in the microwave. Even without sesame paste, it's rich and flavorful thanks to peanut butter, and a "magic powder" tightens the taste in just 5 seconds. Using an Ai Wrap reduces cleanup, making this the ultimate basic recipe.

  • 1 head of broccoli (350g - 400g)

Seasonings

  • [A] Peanut Butter 1 tbsp (18g)
  • [A] Soy Sauce 1 tsp
  • [A] Mirin (Sweet Rice Wine) 1 tsp
  • [A] Sugar 1 tsp
  • [A] Toasted Sesame Seeds 2 tbsp (12g)
  • [B] Sugar 1 pinch
  • [B] Salt a pinch

Steps

  1. Place 1 head of broccoli in a bowl or large bag, fill with enough water to cover, and soak for 5-10 minutes before rinsing.
  2. Thoroughly drain the broccoli.
  3. Prepare one Ai Wrap.
  4. Separate the broccoli into florets. Carefully cut into the base of each floret with a knife and separate.
  5. For larger florets, make a cut about halfway into the base and gently split them into bite-sized pieces with your thumb. (This is the secret!) Cutting florets in half vertically can cause them to fall apart, so cutting and then splitting by hand results in a beautiful finish.
  6. For the broccoli stem, cut off the dried base, peel off the tough outer skin thickly, and cut the juicy part into bite-sized pieces.
  7. Place all cut broccoli into the Ai Wrap.
  8. Microwave the broccoli in the Ai Wrap at 600W for 4 minutes. (This is the secret!) Microwaving locks in flavor and cooks the broccoli as if steaming, making it delicious. A slightly tender texture is ideal for sesame dressing.
  9. After microwaving, place the broccoli on a tray or plate and let it continue cooking with residual heat.
  10. In a heatproof, large bowl, add 1 tbsp Peanut Butter.
  11. Microwave the peanut butter for 20 seconds to melt.
  12. To the melted peanut butter, add 1 tsp Soy Sauce, 1 tsp Mirin (Sweet Rice Wine), 1 tsp Sugar, and 2 tbsp Toasted Sesame Seeds. Mix until well combined.
  13. Remove the microwaved broccoli from the Ai Wrap and add it to the seasoning bowl, including any moisture. Toss thoroughly until everything is evenly coated.
  14. In a small bowl, combine 1 pinch Sugar and a pinch of Salt and mix until combined to create the "magic powder." (This is the secret!) When the sesame dressing flavor seems a bit bland, sprinkling this "magic powder" just before serving tightens the taste and makes it significantly more delicious.
  15. Sprinkle the "magic powder" over the dressed broccoli and toss lightly.
  16. Transfer to a serving dish and enjoy. If you find the taste is too mild, adjust with the "magic powder" right before eating.
