Ryuji's best cheesecake ever. Surprisingly delicious and visually stunning, yet easy to make. The exquisite texture of Oreo and the rich flavor of cream cheese make this a perfect dessert for special occasions.

Ingredients

Main Ingredients (6 servings)

  • Cream cheese 200g
  • Oreo 250g
  • Butter 40g
  • Heavy cream (47%) 200ml
  • Chervil or mint to taste

Seasonings

  • Sugar 35g
  • Lemon juice 1 tbsp
  • Rum 1 tbsp

Steps

  1. Place 200g cream cheese in a bowl and soften at room temperature.
  2. Finely crush 110g Oreo (for the base).
  3. Place 40g butter in a heatproof container and microwave for 30 seconds to melt it.
  4. Mix the crushed Oreo and melted butter together.
  5. Spread the mixed Oreo evenly into a cake mold and chill in the refrigerator to set.
  6. In a separate bowl, add 200ml heavy cream and whip thoroughly with a hand mixer until it forms very stiff peaks (10-minute whip consistency). 【Tip!】 Since no gelatin is used, whip the heavy cream until it reaches a very firm, 10-minute whip consistency. Be careful not to over-whip, as the water and fat may separate.
  7. Thoroughly mix the softened cream cheese until smooth.
  8. Add 35g sugar and 1 tbsp lemon juice to the mixed cream cheese and combine.
  9. Roughly crush 60g Oreo (for mixing in).
  10. Combine the whipped heavy cream, the cream cheese mixed with sugar and lemon juice, and the roughly crushed Oreo. 【Tip!】 The Oreo will absorb moisture from the cream, creating a cookies and cream-like texture.
  11. Pour the mixed batter into the chilled mold and smooth the surface.
  12. Roughly crush 80g Oreo (for decoration) and spread them over the cake.
  13. Sprinkle 1 tbsp rum over the batter. 【Tip!】 Ideally, it's best to add it at the same time as the lemon juice, but sprinkling it afterward is also delicious. You can omit it if children will be eating.
  14. Cover with plastic wrap and chill in the refrigerator for 4-5 hours, or preferably half a day or longer, to set.
  15. Remove the set cake from the mold and garnish with chervil or mint. 【Tip!】 Adding a garnish makes it look elaborate without much effort.
