Two recipes for chicken breast bento (Chicken Mayo & Chicken Teriyaki) that can be made in 5 minutes. These exquisite chicken breast dishes, perfect with rice, can be enjoyed not only as a bento but also as a donburi (rice bowl). With simple ingredients and easy cooking steps, this is a helpful recipe to support your busy daily life.
Ingredients
Main Ingredients (2 servings)
- Chicken breast 300g
- Cooked rice 400g (200g x 2)
- Frozen spinach 50g
- Egg 1
Seasonings
- Potato starch 4 tsp
- Salt 2 pinches
- Black pepper to taste
- Oil 1 tbsp
- Oil 1 tsp
- [A] Mayonnaise generous 1 tbsp
- [A] Ketchup 1 tsp
- [A] Sugar 2 pinches
- [A] Chicken stock powder 2 pinches
- [B] Mirin (Sweet Rice Wine) 1 tbsp
- [B] Soy sauce 1 tbsp
- [B] Ketchup 1 tsp
- [B] MSG(Ajinomoto) (MSG) 3 shakes
- [B] Sugar 2/3 tsp
- Salt and pepper to taste
Steps
- Prepare two portions of frozen cooked rice 200g each, and heat them in a microwave for approximately 5 minutes and 30 seconds.
- Divide chicken breast 300g into two halves, remove the skin (optional), and slice each half into bite-sized pieces about 1cm thick.
- Sprinkle each half of the chicken breast with 1 pinch of salt and black pepper to taste, then coat thoroughly with 2 tsp potato starch and rub in well. [Chef's Tip!] Coating with potato starch helps the chicken breast become tender.
- Heat scant 1 tbsp oil in a frying pan, add one half of the prepared chicken breast, and cook over medium heat until both sides are crispy.
- Once the chicken is cooked, turn off the heat and wipe off any excess oil from the pan. Add generous 1 tbsp mayonnaise, 1 tsp ketchup, 2 pinches sugar, and 2 pinches chicken stock powder, then toss everything together with the residual heat. [Chef's Tip!] Tossing with seasonings after turning off the heat prevents the flavor from becoming too strong and prevents separation.
- Serve the warm rice in a bento box and generously top with the Chicken Mayo.
- Lightly wipe the same frying pan, then stir-fry frozen spinach 50g without adding oil. Season with salt and pepper to taste.
- Place the stir-fried spinach next to the Chicken Mayo rice to complete the Chicken Mayo Bento.
- Wash the frying pan, then heat scant 1 tbsp oil again, and cook the remaining prepared chicken breast until crispy.
- Once the chicken is cooked, wipe off any excess oil. Add 1 tbsp Mirin (Sweet Rice Wine), 1 tbsp soy sauce, 1 tsp ketchup, 3 shakes MSG(Ajinomoto) (MSG), and 2/3 tsp sugar, then toss everything together thoroughly. [Chef's Tip!] Adding ketchup provides a sweet and sour, fruity flavor that pairs perfectly with rice.
- Place the Teriyaki Chicken on top of the warm rice.
- Wash the frying pan, then heat 1 tsp oil. Whisk 1 egg, season with salt and pepper to taste, and cook like scrambled eggs, ensuring it's thoroughly cooked.
- Place the cooked egg next to the Teriyaki Chicken to complete the Chicken Teriyaki Bento.
