A sensational Soy Bibim Somen that's trending on social media. Simply mix cooked somen noodles and carrots with a special sauce. It's refreshing, perfect for summer, and not spicy, so even kids can enjoy it. Easy to make and addictively delicious!

Ingredients

Main Ingredients (1 serving)

  • Somen noodles 100g
  • Carrot 60g
  • Scallions (to taste)
  • Boiled egg (optional)

Seasonings

  • [A] Soy Sauce 2 tbsp
  • [A] Sugar 2 tsp
  • [A] Sesame Oil 2 tsp
  • [A] Vinegar 1 tsp
  • [A] Grated Garlic 1 tsp
  • [A] Toasted Sesame Seeds 1 tbsp
  • Salt (a pinch)

Steps

  1. Peel the 60g carrot, slice thinly about 2mm thick, then julienne.
  2. Add 100g somen noodles and the sliced carrot to boiling water and cook for the indicated 2 minutes.
  3. Drain in a colander, rinse under running water to cool, and thoroughly drain off excess water.
  4. In a bowl, combine 2 tbsp Soy Sauce, 2 tsp Sugar, 2 tsp Sesame Oil, 1 tsp Vinegar, 1 tsp Grated Garlic, and 1 tbsp Toasted Sesame Seeds. Mix well.
  5. Add the drained somen noodles and carrot to the bowl, break apart the noodles, and toss with the sauce.
  6. Lightly season with a pinch of salt to taste.
  7. Plate the noodles and sprinkle with your desired amount of chopped scallions.
  8. Place a soft-boiled egg (boiled for 7 minutes in hot water) in the center of the noodles. This is the key! Crushing the egg and mixing it with the noodles enhances the flavor even further.
