Steps

  1. Soak 1 small head of broccoli (200g) in water and wash off any dirt.
  2. Cut the washed broccoli into florets and stems, then finely chop both.
  3. Trim the tough end off the broccoli core and finely chop it.
  4. Place the finely chopped broccoli core in a bowl, cover with plastic wrap, and microwave at 600W for 2 minutes.
  5. Briefly rinse the softened broccoli core with water, let it cool, drain thoroughly, and place in a bowl. (Key tip: Heating the core beforehand retains a crispy texture and results in a delicious dish.)
  6. Finely chop 5 slices of bacon into 5mm-1cm pieces and add them to the bowl with the broccoli.
  7. Add 2 tbsp of all-purpose flour to the bowl and coat the broccoli and bacon. (Key tip: Finely chopping the broccoli florets helps the mixture bind together better.)
  8. Once coated with flour, add 2 eggs and 1/4 tsp of salt and pepper. Mix well while lightly beating the eggs. (Key tip: The savory flavor of the bacon will spread throughout, making it delicious.)

  10. Spread the mixed batter evenly into the heated frying pan.
