A healthy yet satisfying sandwich recipe, featuring melted cheese and ham sandwiched with plenty of zucchini, all wrapped in fried tofu pouches and grilled. The exquisite combination of gooey cheese and fragrant fried tofu makes this a perfect dish for lunchboxes.

Ingredients

Main Ingredients (2 servings)

  • Fried Tofu Pouches 2 sheets
  • Zucchini 1 (200g)
  • Cabbage 100g
  • Mixed Cheese 30g
  • Ham 3 slices
  • All-purpose Flour (for dusting) As needed

Seasonings

  • Salt 1/4 tsp
  • Mayonnaise As needed
  • Coarsely Ground Black Pepper As needed
  • Vegetable Oil As needed

Steps

  1. Cut off both ends of 1 Zucchini (200g) and julienne it.
  2. Julienne 100g Cabbage to match the length of the zucchini.
  3. Mix 1/4 tsp Salt into the cut vegetables and let them sit for 10 minutes.
  4. Pour hot water over 2 Fried Tofu Pouches to remove excess oil.
  5. Carefully roll a chopstick along the surface of the fried tofu pouches, being mindful of burns.
  6. After rolling with the chopstick, make cuts along the edges of the fried tofu pouches, leaving one long side intact.
  7. Carefully open the fried tofu pouches, taking care not to tear them.
  8. Lightly dust the inner surface of the opened fried tofu pouches with all-purpose flour as needed.
  9. Squeeze out the water thoroughly from the zucchini and cabbage that have been salted and left for 10 minutes. This is a key step for preventing sogginess and ensuring a delicious outcome.
  10. Lightly grease a frying pan with vegetable oil as needed.
  11. Place one of the fried tofu pouches in the pan with the floured side facing up.
  12. Layer the squeezed vegetables on top of the tofu pouch.
  13. Drizzle mayonnaise as needed evenly over the vegetables.
  14. Sprinkle with coarsely ground black pepper as needed, if desired.
  15. Place 30g of mixed cheese in the center, leaving about 2cm border from the edges.
  16. Arrange 3 slices of ham over the mixed cheese. Cut the third slice in half to fit.
  17. Cover the filling with the remaining fried tofu pouch, with the floured side facing inwards. Dusting with flour helps the filling adhere firmly to the tofu pouch, ensuring a neat and stable shape when grilled.
  18. Heat over medium heat, grilling while warming the frying pan.
  19. Once the bottom of the fried tofu pouch is browned, flip it over and grill the other side until golden brown.
  20. Once both sides are browned, cut into about 6 bite-sized pieces and arrange on a plate.
