  • Sweet Potato 200g
  • Potato Starch 3 tbsp

Seasonings

  • [A] Butter 10g
  • [A] Salt 1/4 tsp
  • Vegetable Oil (for cooking)

Steps

  1. Peel and thinly slice 200g of sweet potato into 1mm thick strips.
  2. Briefly rinse the sliced sweet potato under water and soak it for 5 minutes.
  3. Drain the sweet potato in a colander and place it in a microwave-safe container.
  4. Cover with plastic wrap and microwave on 600W for 2 minutes.
  5. Add 10g of butter and 1/4 tsp of salt to the microwaved sweet potato, and mix until the butter melts.
  6. Add 3 tbsp of potato starch and mix until evenly coated.
  7. Heat vegetable oil in a frying pan over medium heat.
  8. Arrange the sweet potato mixture in the pan to form a flat circle and cook until the bottom is browned.
  9. Flip the sweet potato patty and cook the other side until it's also well-browned. This is the key! Thoroughly browning the surface will create a crispy texture.
  10. Once evenly browned, remove from heat and transfer to a plate.
