These komatsu and tuna pancakes are incredibly easy to make – just mix and bake! They're a budget-friendly meal that can be prepared in 10 minutes for about $1.50. Adding carrots makes them colorful, and the sesame oil aroma whets your appetite. They're perfect for those who want to eat more vegetables or need an extra side dish.

Ingredients

Main Ingredients (1 pancake)

  • Komatsuna (Japanese Mustard Spinach) 1/2 bunch (100g)
  • Carrot 1/4 (50g)
  • Canned Tuna 1 can (70g) (drained)
  • Cake Flour 2 tbsp
  • Egg 1
  • Water 1 tbsp

Seasonings

  • Dashi Powder 1 tsp
  • [A] Vegetable Oil 1/2 tbsp
  • [A] Sesame Oil 1/2 tbsp

Steps

  1. Trim the ends of 1/2 bunch (100g) Komatsuna and cut into 3cm pieces.
  2. Peel and finely julienne 1/4 carrot (50g).
  3. Place the cut komatsuna and carrot into a bowl.
  4. Add 1 can (70g) canned tuna (drained) to the bowl and mix everything together.
  5. Add 2 tbsp cake flour and 1 tsp dashi powder to the bowl and mix until the flour evenly coats the ingredients.
  6. Lightly beat 1 egg and add it to the bowl along with 1 tbsp water. Mix well until everything is incorporated.
  7. Mix together 1/2 tbsp vegetable oil and 1/2 tbsp sesame oil. [Secret Tip!] Komatsuna pairs well with the flavor of sesame oil, so adding it makes the dish extra delicious.
  8. Heat the mixed oil in a frying pan over medium heat.
  9. Once the pan is hot, add all the ingredients and shape them into a flat circle about 22cm in diameter. Since the komatsuna takes up a lot of volume, press it down with a spatula while it cooks.
  10. Cook until the bottom is golden brown.
  11. When it's golden brown and the pancake slides easily in the pan, carefully transfer it to a plate.
  12. Drizzle the remaining oil in the pan over the cooked side of the pancake, then cover the pan with the plate and flip it over.
  13. Reshape the pancake and cook until golden brown on the other side.
  14. Once both sides are golden brown, turn off the heat.
  15. Cut the "Komatsu Tuna Pancakes" into desired serving sizes and plate them. If you find it a bit bland, you can serve it with your favorite condiments.
