Steps
- Peel and julienne 150g of daikon radish.
- Place the julienned daikon in a bowl, add 1/6 tsp of salt, and let it sit until softened. (Key Tip!) Salting the daikon helps to release its moisture, making it easier to bind with the pork.
- Finely chop 200g of pork scraps.
- Add the chopped pork scraps to the bowl along with 1 tsp of soy sauce, 1 tsp of sesame oil, 1 tsp of grated garlic, and 1 tbsp of cooking sake (rice wine). Mix well to combine.
- Add 2 tbsp of potato starch and mix until evenly distributed. (Key Tip!) Combining the moisture from the daikon with the potato starch ensures the pork scraps remain moist and tender.
- Heat oil in a frying pan over medium heat.
- Take portions of the combined mixture, shape them into round patties, flatten them slightly into oval shapes, and arrange them in the heated frying pan.
- Pan-fry until golden brown and crispy.
- Flip to the other side once browned.
- Cover with a lid and steam-fry over low heat for 3 minutes.
