An incredibly easy yet surprisingly delicious bake made with broccoli and eggs. By mashing and grilling, the broccoli's umami is concentrated, and the egg creates a satisfying volume. This budget-friendly, healthy recipe with minimal ingredients is perfect as a snack or side dish.
Ingredients
Main Ingredients (2 servings)
- Broccoli 1 head (150g)
- Egg 1
- All-purpose Flour 1 tbsp
- Salt a pinch
Seasonings
- [A] Mayonnaise 1 tbsp
- [A] Ketchup 1 tbsp
- [A] Sugar 1/2 tsp
- [A] Curry Powder 1/3 tsp
Steps
- In a bowl, combine 1 tbsp Mayonnaise, 1 tbsp Ketchup, 1/2 tsp Sugar, and 1/3 tsp Curry Powder to make a spicy aurora sauce.
- In a separate bowl, add 1 tbsp All-purpose Flour and a pinch of Salt, then crack in 1 Egg.
- Whisk the egg until combined and no lumps of flour remain.
- Break 1 head of Broccoli (150g) into bite-sized florets. To separate them cleanly without the florets falling apart, make a cut into the stem with a knife and then pull them apart by hand.
- Place the separated broccoli florets in a microwave-safe container, cover with plastic wrap, and microwave at 600W for 2 minutes.
- Place the microwaved broccoli on a flat surface and press down with the bottom of a cup to mash it. Mashing the broccoli flat allows the egg mixture to coat it well, resulting in a beautiful bake.
- Heat oil in a frying pan over medium heat.
- Once the pan is hot, dip the mashed broccoli into the whisked egg mixture made in step 3, and place them in the pan.
- Once browned on one side, flip and cook the other side.
- Dip the browned broccoli again into the remaining whisked egg mixture and cook until the surface is browned, using up all the egg mixture.
- Once both sides are browned, remove the broccoli, and plate. Enjoy!
