The crispy bean sprouts, fluffy eggs, and sweet soy sauce seasoning are a perfect match for rice and beer. It's a filling dish that's also budget-friendly.
Ingredients

- 2 eggs
- 1 bag bean sprouts (200g)
- 100g ground pork
- A little chopped green onion
Seasonings
- [A] 2 tbsp Mirin (Sweet Rice Wine)
- [A] 2 tbsp Soy Sauce
- [A] 1 tbsp Sugar
Steps
- Crack 2 eggs into a bowl and lightly beat them.
- Remove 1 bag of bean sprouts (200g) from the packaging, rinse briefly under water, and drain well in a colander.
- Heat some oil in a frying pan over medium heat.
- Once the pan is hot, add 100g of ground pork and stir to break it up.
- Once the ground pork is cooked through, add 2 tbsp Mirin (Sweet Rice Wine), 2 tbsp Soy Sauce, 1 tbsp Sugar, and the bean sprouts. Stir everything together.
- Stir-fry briefly for about 1 minute until the bean sprouts are slightly softened. (This is the key!) Don't overcook the bean sprouts to maintain their crispiness.
- Pour the beaten eggs evenly over the mixture.
- Cover the pan and cook until the eggs are done to your liking.
- Transfer to a plate.
- Sprinkle with a little chopped green onion in the center and serve.
