Ingredients

Main Ingredients (2 servings)

  • 2 eggs
  • 1 bag bean sprouts (200g)
  • 100g ground pork
  • A little chopped green onion

Seasonings

  • [A] 2 tbsp Mirin (Sweet Rice Wine)
  • [A] 2 tbsp Soy Sauce
  • [A] 1 tbsp Sugar

Steps

  1. Crack 2 eggs into a bowl and lightly beat them.
  2. Remove 1 bag of bean sprouts (200g) from the packaging, rinse briefly under water, and drain well in a colander.
  3. Heat some oil in a frying pan over medium heat.
  4. Once the pan is hot, add 100g of ground pork and stir to break it up.
  5. Once the ground pork is cooked through, add 2 tbsp Mirin (Sweet Rice Wine), 2 tbsp Soy Sauce, 1 tbsp Sugar, and the bean sprouts. Stir everything together.
  6. Stir-fry briefly for about 1 minute until the bean sprouts are slightly softened. (This is the key!) Don't overcook the bean sprouts to maintain their crispiness.
  7. Pour the beaten eggs evenly over the mixture.
  8. Cover the pan and cook until the eggs are done to your liking.
  9. Transfer to a plate.
  10. Sprinkle with a little chopped green onion in the center and serve.
