  • [Marination] Cooking Sake (Rice Wine) 1 tsp
  • [A] Vinegar 3 tbsp
  • [A] Soy Sauce 3 tbsp
  • [A] Sugar 3 tbsp
  • [A] Ketchup 1 tsp
  • [A] Tabasco (to taste)
  • [A] Potato Starch slurry 1 1/2 tsp
  • Garlic 1 clove
  • Green Onion 30g
  • Dried Chili Peppers (to taste)
  • Dark Sesame Oil 2 tsp

Steps

  1. Drain the oysters (10 pieces), place them in a bowl, and season with salt, pepper, and cooking sake (rice wine) 1 tsp to marinate.
  2. Heat the frozen french fries (1 bag) according to package directions in the microwave.
  3. In a separate bowl, combine vinegar 3 tbsp, soy sauce 3 tbsp, sugar 3 tbsp, ketchup 1 tsp, Tabasco (to taste), and potato starch slurry 1 1/2 tsp. Mix well to create the sauce.
  4. In a bowl for the flour coating, combine water 2 tbsp and all-purpose flour 2 tbsp. Mix to create a batter.
  5. Lightly coat the marinated oysters with all-purpose flour.
  6. Add the prepared batter to the bowl with the oysters and ensure they are evenly coated.
  7. Cut the microwaved french fries into bite-sized pieces.
  8. Fry the battered oysters in oil heated to 160-170°C (320-338°F).
  9. Remove the oysters from the oil when the coating is just puffy. This is the key! Cooking them about 70% through will tighten the oyster meat and make them delicious.
  10. Increase the oil temperature to over 180°C (356°F), then re-fry the oysters. This is the key! Double-frying will result in a crispy coating.
  11. Heat oil in a frying pan and sauté the minced garlic (1 clove) until fragrant.
  12. Add the chopped green onion (30g) and dried chili peppers (to taste) and stir-fry.
  13. Add dark sesame oil 2 tsp and stir-fry.
  14. Add the bite-sized french fries (1 bag) and stir-fry.
  15. Pour in the prepared sauce and stir-fry quickly to coat everything evenly.
  16. Add the double-fried oysters, toss vigorously, and mix well. It's ready!
