A salad recipe using plenty of bell peppers, easily made in the microwave. It's a dish that goes well with any Japanese, Western, or Chinese meal, combined with carrots and ham. It's so delicious you won't be able to stop eating it, and it's also great for meal prep.
Ingredients
Main Ingredients (2 servings)
- 3 bell peppers (2 if large)
- 1/3 carrot (50-60g)
- 2-3 slices ham
- 1 tsp white roasted sesame seeds
Seasonings
- [A] Soy Sauce 2 tsp
- [A] Vinegar 1 tsp
- [A] Preferred Oil 1/2 tsp
- Salt (to taste)
Steps
- Thinly peel the skin of 1/3 carrot (50-60g) with a knife or peeler.
- Cut the carrot into thin strips along the grain. **Key Tip:** Since it's not cooked, cutting it as thinly as possible improves the texture. If cut thick, you can also parboil it.
- Place the cut carrots in a bowl, sprinkle with a pinch of salt, and let sit for about 5 minutes to allow the salt to meld.
- Cut 3 bell peppers (2 if large) in half lengthwise.
- Break off the stems of the bell peppers, and roughly remove the seeds and pith with your fingers. The remaining seeds can be cleanly removed by holding the cut side down and flicking with your finger.
- Place the bell peppers cut side down and slice into 5-6mm wide strips. **Key Tip:** If it becomes unstable, place it flat on the cutting board and cut while tilting it slightly.
- Lay the sliced bell peppers flat on a microwave-safe plate lined with plastic wrap, and microwave for 40 seconds at 600W.
- Slightly spread out the microwaved bell peppers to let them cool down to room temperature.
- Slice 2-3 slices of ham into about 5mm wide strips.
- Place the sliced ham into the bowl where you will mix everything at the end.
- In a separate bowl, combine 2 tsp soy sauce, 1 tsp vinegar, and 1/2 tsp of your preferred oil. **Key Tip:** Adjust the type of oil to your preference, using vegetable oil, rice oil, olive oil, etc.
- Squeeze out the water from the salted carrots firmly by hand.
- Add the squeezed carrots and the cooled bell peppers to the bowl with the ham.
- Continue by adding 1 tsp white roasted sesame seeds. **Key Tip:** If using roasted sesame seeds, lightly rub and crush them between your fingers as you add them to enhance their aroma.
- Add the combined seasonings (soy sauce, vinegar, oil) to the bowl.
- Mix everything well. Taste and adjust with salt if it lacks seasoning.
- Serve on a plate. It's ready!
