  • Red chili pepper 1
  • Stir-frying oil (such as vegetable oil) 2 tsp

Seasonings

  • Sesame oil 1 tsp
  • [A] Dashi stock 150ml
  • [A] Soy sauce (light soy sauce if available) 1.5 tbsp
  • [A] Mirin (Sweet Rice Wine) 1.5 tbsp
  • [A] Cooking Sake (Rice Wine) 1.5 tbsp
  • [A] Sugar 0.5 tbsp

Steps

  1. Prepare 200g of pre-boiled butterbur, drained.
  2. Remove the seeds from 1 red chili pepper using a bamboo skewer or similar tool.
  3. Add 2 tsp of vegetable oil and 1 tsp of sesame oil to a pot or frying pan. 【This is the secret!】 Using only sesame oil can make the flavor too strong, so blending them is recommended.
  4. Heat over medium heat.
  5. Once the pot is hot, add the drained 200g of pre-boiled butterbur and the deseeded 1 red chili pepper, and stir-fry briefly.
  6. Once the butterbur is coated with oil, add all the seasonings: 150ml dashi stock, 1.5 tbsp soy sauce, 1.5 tbsp cooking sake, 1.5 tbsp mirin, and 0.5 tbsp sugar. 【This is the secret!】 Using light soy sauce will result in a beautifully colored dish.
  7. Stir with chopsticks to dissolve the seasonings and wait for it to boil.
  8. Once the liquid boils, reduce the heat slightly.
