This is 'Curry Chirimen,' featuring young sardines cooked in a sweet and savory curry flavor. Part of our 'Rice Stealing Series,' it's perfect for when your appetite is low. It keeps in the refrigerator for 4 days and can be frozen for up to 2 months, making it ideal for meal prepping.
Ingredients
Main Ingredients (Family Size Batch)
- Young Sardines (Shirasu) 150g
Seasonings
- [A] Cooking Sake (Rice Wine) 100ml
- [A] Mirin (Sweet Rice Wine) 3 tbsp
- [A] Soy Sauce 2 tbsp (use light soy sauce if available)
- [A] Sugar 2 tsp to 1 tbsp
- [A] Curry Powder 1 tbsp
Steps
- In a pot, combine Cooking Sake (Rice Wine) 100ml, Mirin (Sweet Rice Wine) 3 tbsp, Soy Sauce 2 tbsp, Sugar 2 tsp to 1 tbsp, and Curry Powder 1 tbsp. Mix lightly to dissolve.
- Place the pot over high heat.
- Once boiling, add all Young Sardines (Shirasu) 150g.
- Gently break apart the sardines with chopsticks.
- Once it starts boiling again, reduce the heat to low.
- Simmer over low heat for about 7-9 minutes. [Key Tip!] The goal is to simmer until the liquid has almost completely evaporated.
- Turn off the heat, let it cool down, transfer to a container, and it's ready!
